10?’s with Chef Dane Shipp

February 17, 2020 By Lisa Grigsby

Chef Dane Shipp

Chef Dane Shipp is approaching his second anniversary in the kitchen of Lock 27 Brewery.  A graduate of the Sinclair Culinary program he’s been cooking around town for over ten years.  Having started at the downtown branch of Lock 27 in winter of 2018, he was recently promoted to Executive Chef, overseeing both locations of the breweries restaurants.   Having just rolled out 17 new menu items, he made some time to take on DMM’s Chef 10?’s interview:

1.  What is your favorite ingredient to cook with?

My favorite ingredient to work with is garlic! It’s one of the most flavorful ingredients out there! I use it in a lot of my dishes. Roasted, fried crispy for asian dishes, sliced raw, etc…

2.  What ingredient do you dread?

I’d have to say the ingredient I dread the most is beets! Only because it takes a long time to cook, and it will stain you and everything around you!

3. What’s your favorite dish to make?

My favorite dish to make is pad kee mao (drunken noodles) I’m obsessed with asian cuisine, and that’s my favorite noodle dish. Spicy, and fresh ingredients!

Steak ramen

4. What’s your favorite pig out food?
That would have to be tacos! I can literally eat 20 tacos! One of the best creations ever made!

5. What restaurant, other than your own, do you like to dine at in the Miami Valley?
I go to a lot of different restaurants in the Dayton area! Because of my plant based diet I’m limited, but to name a few, Wheat Penny, Tik’s Thai Express, Taqueria Mixteca, Linhs Bistro, and Little Saigon!

6. What’s your best advice for home chefs?
My advice to home chefs is to try cooking with new ingredients! Experiment with new flavors! Gotta fail in attempts at different recipes in order to get better!

Scallops with bacon jam and roasted carrots

7. If you could invite any 4 guests to a dinner party who would they be and why?

Lebron James– basketball was my first love, and I grew up watching him! He’s inspirational, and from a small town in Ohio like myself. I respect him a lot!
2 Chainz– I appreciate his taste in the finer things in life!  He not afraid to try different stuff, and I know he would appreciate my cooking!
Dave Chappelle– obviously everyone knows how funny this guy is! To be in a room with him would be a great experience! Comedians have different ways of thinking, and they are not afraid to say what they want. I respect his real ness
Barack Obama– Obama might be the coolest dude in the world! I just feel like he is always calm and chill! I feel like all those guys at a dinner party would create a really good vibe!

Lobster risotto

8. Who do you look up to in the industry and why?

Honestly I look up to the underdogs. They people who are famous chefs, or classically trained. I’ve never been trained by anyone, so I can relate to the people who just know how to cook really good from getting in the kitchen and working at your craft! I look up to people like action bronson, and Matty Matheson. I can relate to people like that.

9. What do you do in the Miami Valley on a day off?
On a day off, I usually will go to a bigger city like Columbus or Cincinnati, and enjoy the city! Eating food, drinking cocktails, and experience all the culture I can!

10. share a kitchen disaster, lucky break or other interesting story:
My lucky break was honestly coming to lock 27. I was at my previous job for 8 years, and they never let me showcase my creativity. When I came to lock, I was creating dishes within the first 2 weeks, and after a year I was the executive chef! So now I create 4-5 dishes every single week for both locations, and it’s a rare thing in Dayton, OH for a chef to have that much creativity that doesn’t own the establishment!

Keith Sweat Live at Rose Music Center

February 10, 2020 By Lisa Grigsby

R&B singer/songwriter Keith Sweat is teaming up with SILK and Ginuwine for one night only to perform at Rose Music Center on Saturday, June 6th.

Legend Keith Sweat is a Harlem, N.Y born songwriter/record producer/vocalist/actor/ radio personality, with a career that spans 30+ years of record breaking and trail blazing contributions to the Pop and R&B genre. He is coined the genius behind the “New Jack Swing” phenomenon of the late 1980’s. Keith Sweat’s timely transition to the R&B mecca of Atlanta in 1992 added “label impresario” to his roster of talents. Keith has dominated the Pop and R&B worlds with an indefinable presence. His debut and now classic album Make It Last Forever sold more than three million copies, producing four R&B hit singles, including “I Want Her,” which also landed at #5 on the Pop charts. The album stats also include a nomination for the 1989 Soul Train Best R&B/Urban Contemporary Song of the Year award. Keith Sweat has delivered five straight #1 albums, selling a worldwide total of 25 million records. His self-titled 1996 effort, Keith Sweat, gained quadruple platinum status. His critically acclaimed collaboration with fellow superstars Gerald Levert and Johnny Gill on the double platinum LSG, was launched a decade after he first landed in the music business.

He has thrived as one of Atlanta’s first record industry moguls, building his own recording studio and discovering new artists such as SILK and Kut Klose – signing both multi-platinum groups to his Keia Record label. Sweat has become one of Atlanta’s leading mentors for young talent, its principle purveyor of R&B music. The unflappable Sweat points to his consistency as the key to his success and achievement of a dozen top ten R&B singles including seven #1’s, four top five Pop singles and frequenting Billboards Top Charts.

After being named Favorite Male R&B/Soul Artist by the American Music Awards in 1997, Sweat celebrated his longevity with his 1998’s aptly titled album, Still in the Game. His 2008 album Just Me made waves on radio and at cash registers and endorsed his claims to remain “in the game”. Keith released his tenth studio album Ridin Solo in 2010. This multi-talented artist masters his craft and expounds upon various interests that keep him fresh in the public’s eye. The state of Georgia authenticated Keith Sweat’s extraordinary talent in the music business with a coveted induction into the Georgia Music Hall of Fame in 2008.

He has appeared on both the Martin show and the Wayans Brothers show, among others, and has starred in a handful of independent movies. Keith Sweat’s initiation into the reality show craze, Keith Sweat’s Platinum House, yielded #1 ranking on the Centric network – of which, he was Creator and Executive Producer.

In his third decade in the spotlight, Sweat has almost become a genre unto himself, his pleading ballads a mainstay of radio’s “Quiet Storm” format. As if in acknowledgement of that, Sweat hosts the #1 nighttime nationally syndicated radio show, “The Sweat Hotel”. The live call-in program boasts 3 million listeners exchanging dialogue with Keith about matters of the heart. Like the steady beat of his up-tempo hits and tantalizing ballads, Keith Sweat, remains relevant – voted #11 on the list of the 20 Greatest R&B/Soul cd’s of all time for his epic album Make It Last Forever by the Georgia Informer magazine. Keith Sweat garners an impressive fan base in the fickle genre of Pop R&B and continues to redefine boundaries.

Tickets for the Huber Heights show will go on sale to the public beginning at 11:00am on Friday, February 14th at www.Ticketmaster.com and www.Rosemusiccenter.com. Ticket prices include parking and are subject to applicable Ticketmaster fees.  Dates, times and artists subject to change without notice. All events rain or shine.

Grand Opening of B&G’s Cigar Lounge

February 6, 2020 By Lisa Grigsby

Friday, Feb 7th from 5-9pm is the Grand Opening of B&Gs Cigar Lounge located at 319 West Central Avenue in West Carrollton.  Well actually according to co-owner Gonzo, this celebration is for Phase One of the business, which consists of the humidor (pictured below) and the first lounge, called the Casa de Coronas (which translates to house of crowns). Comfy chairs allow you to watch your favorite game in a relaxed environment and there are plenty of tables for a game of dominos or cards.

A fine selection of over 700 premium cigars awaits your selection in the humidor and you don’t need to be intimidate,  they are happy to help you find the right one for you.  Gonzo explains that determining the right cigar, be it mild, medium, or full flavored, is often based on your palate, which can change based on your most recent meal, and other factors, like whether you are well hydrated or not.

Phase two of the 8000 square foot building will come mid-summer, adding two private seating areas and more lounge space.
There’s even room for future expansion, should they determine they need more space.

Co-owners  Bryan Emerson and Gonzo Gonzales  met in 2003, when they served in Korea. Together they will strive to make B&G’s a home away from home for cigar lovers, or as Gonzo says, “a place where you can come in grab a quality stick and enjoy it in the lounge.”  You can purchase a cigar for as little as $4 and currently the most expensive one the stock runs $22, but they’ll soon be adding some higher end cigars, which will retail for about $40.  While you always hear about the excellence of Cuban cigars, Gonzo shared that “Nicaragua is making some cigars that are being well received world-wide right now.”

They also have a full selection of cutters, lighters and even home humidors which from from $50 – $250 and gift certificates are available.  Look for upcoming cigar tastings, bourbon pairings and other events in the future.

Introducing the Dine Diner Divas

February 4, 2020 By Lisa Grigsby

The Dayton Dine Diner Divas (DDD) consists of 6 ladies…5 members of the Dayton Daily News Ten Top Women Class of 2013 (Kim Duncan, Penny Wolff  Lynda Hoffman, Frances McGee-Cromartie and Maureen Patterson…all retired & looking for daily adventures) plus they’ve adopted diva Joan Klepacz. As they dine their way across the Miami Valley, from time to time they’ll share their adventures here with us.

5 of the 6 DDD: Kim Duncan, Penny Wolff, Frances McGee-Cromartie, Joan Klepacz, Lynda Hoffman.

Another hidden gem discovered today by the Dive Diner Divas. How have we lived and/or worked so many years in North Dayton and not experienced this home cooking pile of deliciousness?!?!

Our original visit six months ago was unfortunately diverted due to tornado damage, but we were determined to give this local owned mom & pop diner a chance. So glad we did (10 thumbs up for their broasted chicken, cabbage rolls and chicken & dumplings!)

Sadly, the horrific damage from the Memorial Day tornadoes it’s still apparent everywhere in north Dayton. For those who live elsewhere, don’t forget or neighbors who are still suffering terribly. Give them a helping hand if you can.

ABOUT GOO GOO DOLLS:

Formed in Buffalo, NY during 1986 by John Rzeznik and Robby Takac, Goo Goo Dolls quietly broke records, contributed a string of staples to the American songbook, connected to millions of fans, and indelibly impacted popular music for three-plus decades. Beyond selling 12 million records worldwide, the group garnered four GRAMMY® Award nominations and seized a page in the history books by achieving 14 number one and Top 10 hits at Hot AC—“the most of any artist.” As a result, they hold the all-time radio record for “Most Top 10 Singles.” Among a string of hits, “Iris” clutched #1 on the Hot 100 for 18 straight weeks and would be named “#1 Top 40 Song of the Last 20 Years.” Thus far, A Boy Named Goo [1995] went double-platinum, Dizzy Up The Girl went quadruple-platinum, and Gutterflower [2002] and Let Love In [2006] both went gold as Something for the Rest of Us [2010] and Magnetic [2013] bowed in the Top 10 of the Billboard Top 200. 2016’s Boxes attracted the praise of People and Huffington Post as Noisey, Consequence of Sound, and more featured them. Their music has been covered by everyone from Taylor Swift to Leona Lewis. Among many accolades, John received the prestigious “Hal David Starlight Award” in 2008 as well.

Following a sold-out 2018 twentieth anniversary tour in celebration of Dizzy Up The Girl, Goo Goo Dolls wrote and recorded their twelfth full-length album, Miracle Pill [Warner Records]—ignited by the first single and title track “Miracle Pill” and kicking off a bold and bright new era in the process. Miracle Pill arrived on September 13th, 2019 via Warner Records.

Its Almost Time For the New The Century Bar To Open!

February 1, 2020 By Lisa Grigsby

“For over 20 years Joe Head and I have toasted ‘to the light at the end of the tunnel.’ Today we feel like we are being blinded by that light.”

That’s how Diane Spitzig, co-owner of The Century Bar shared is feeling today, as they were unpacking all the bourbon and glassware into the new bar.  The move, which was literally right next door to the building that housed The Century since 1942, has been planned for a while.  The Century actually shut down on Dec 31st, 2019 and walking through it today, I’m amazed at just how small it really is.

The original building at 20 S. Jefferson

One of the biggest questions everyone asked when hearing the bar was moving, was are you moving the bar.  Technically it’s the bar back, constructed in 1862 as part of the Gibson Hotel in Cincinnati.  It was brought to Dayton by Frank Steffen in the 1920’s.  The carved maidens seem to hold up the stained glass dome lighting.  The bar was taken apart, numbered, cleaned and moved piece by piece, and seeing it today, it looks even more spectacular in its new home.

The bar in its new home.

The tasting bar

Moving next door to 18 S. Jefferson Street will allow for a dozen more seats around the bar, more barrel seating, two large round tables on either side of the front doors with chandeliers hung above.  They are also having another piece of the bar back replicated to expand across the larger bar. These finishing touches may not be ready when the doors open, but will be added over time.

Joe’s pride and joy, the One Man Bourbon Show Nerd Bar will sit on the south wall of the building. Here Joe will bring back his famed tastings and guests will have a chance to grab one of the 10 bar stools and just talk bourbon with him from 4-8pm Monday – Wednesday.  On Thurday- Saturday, the stools will be sold as a $10 ticket via eventbrite for a 2 hour seating that includes your first drink.  Sales will stop the night before, and if there are open seats guests will be able to sit at the nerd bar on a walk in basis.

Bringing out the VIP bottles for Joes bar.

Joe says he’s been saving bottles to fill these shelves for as long time and will feature very rare bourbons, private label bourbons from their own barrels and other surprises for the guests at his specialty bar.

Helping get things ready for the opening Joe called on a group of the Century Syndicate, an invite only group of regulars who helped them move up from the basement all the barstools, bottles and glassware that’s been in storage for the past month.  Joe said that in 45 minutes they had made a huge dent and the bar was starting to take shape.

Today when I was there,  folks were hanging speakers,
signs and lighting, washing glasses, assembling chandeliers and arranging bottles on the back bar.
One of the biggest worries folks have had, was will it still have the same atmosphere as the old place.  I’d say it will have a familiar feeling, but better.  There will be room to move around and double the number of bathrooms.  Diane shared she’s so excited she’ll actually have an office in the new space.

In another couple of months the 2nd floor cocktail bar should be open and even better the 3rd floor event space won’t be far behind that.  The event space should be able to seat about 120 or hold even more for cocktail parties.

Bartenders Jarrod, Tim, Joe and Nick

As Tim, a long time Century bartender explained, “it’s like a whole new beginning, with every single inch of this place planned for what we want it to be.  It’s so exciting to see it come to life.”

There will be 2 taps at either end of the bar, always featuring draft beers from Warped Wing and Branch and Bone.

By late afternoon today, it’s already beginning to look like home.  Stay tuned to The Century Bar facebook page for an announcement about their opening!

Diane shared the old sign will be coming down and there is a new sign in the works for the building entry, but we’ll have to stay tuned to see what that looks like.

The Simon & Garfunkel Story Comes to Dayton

January 21, 2020 By Lisa Grigsby

The internationally-acclaimed hit theater show The Simon & Garfunkel Story will stop by the Benjamin and Marian Schuster Performing Arts Center on Sunday, Feb. 9 at 7 p.m. during the coast to coast U.S. tour. Tickets are on sale now at the Ticket Center Stage Box Office, by calling 937-228-3630, 888-228-3630 or online at www.ticketcenterstage.com.

The Simon & Garfunkel Story is an immersive concert-style theater show that chronicles the amazing journey shared by the folk-rock duo, Paul Simon and Art Garfunkel. It tells the story from their humble beginnings as Tom & Jerry to their incredible success as one of the best-selling music groups of the ‘60s to their dramatic split in 1970. It culminates with the famous “The Concert in Central Park” reunion in 1981, with more than half a million fans in attendance.

Using state of the art video projection, photos, and original film footage, the show also features a full live band performing all of their hits, including “Mrs. Robinson” (featured in the 1967 film The Graduate), “Cecilia,” “Bridge Over Troubled Water,” “Homeward Bound,” and many more.

With more than 100 million album sales since 1965, Simon & Garfunkel’s perfect harmonies and songs that poignantly captured the times made them one of the most successful folk-rock duos of all time. Over the years, they won 10 Grammy© Awards and were inducted into the Rock and Roll Hall of Fame in 1990. In 1977, their Bridge Over Troubled Water album was nominated at the 1977 Brit Awards for Best International Album. In 2003, Simon and Garfunkel were awarded a Grammy© Lifetime Achievement Award, and the following year saw their “The Sound of Silence” awarded a Grammy Hall of Fame Award©.

Tickets are on sale now at the Ticket Center Stage Box Office, by calling 937-228-3630, 888-228-3630 or online at www.ticketcenterstage.com.

First inductees Announced For The Funk Music Hall of Fame

January 20, 2020 By Lisa Grigsby

On Saturday, Sept 26th as a part of the 2nd Dayton Funk Symposium  held at the University of Dayton, The Funk Music Hall of Fame & Exhibition Center will induct its first class of inductees into The Funk Music Hall of Fame – James Brown, George Clinton & the Parliament Funkadelic and The Ohio Players.  As pioneers of a musical genre which came to life during the Civil Rights and Black Power Movements, these artists created a cultural form of expression that allowed Black musicians to speak freely about African American social and cultural life.

Brown, Clinton and The Ohio Players are Funk pioneers who attributed to the birthing of the different forms of the Funk genre such as P-Funk, Jazz-Funk, Fusion Funk and Electro Funk just to name a few. Today we celebrate those who brought it to life by forever remembering their wonderful legacies as our first inductees.

James Brown Photo by James Mccauley/REX/Shutterstock

James Brown, “The Godfather of Soul”, can also be called “the Founding Father of Funk.’ His famous song, “Say it Loud, I’m Black and I’m Proud!” was an anthem that placed Funk music as part of the cause to advance Black pride and empowerment. Brown is not only known for his contributions to social change, he is also noted for creating the then funky new sound called “On the One!” – the defining beat of Funk music that distinguishes it from other genres. He will always be remembered as the musician who developed this signature groove emphasizing the downbeat. His unique style remains recognizable in the music of countless musicians who have adopted his Funky sound.  His songs, “Say it Loud, I’m Black and I’m Proud” and “Soul Power” caused Funk and Soul music to become deeply connected to the issues surrounding urban black communities and racial injustice.  All in all, his lyrics instilled confidence, pride and awareness among Black Americans.

George Clinton

George Clinton & Parliament-Funkadelic Funkadelic is the visionary leader of a large collection of musician groups including, Parliament & Funkadelic, Brides of Funkenstein, and Parlet. Also, he opened the door for Bootsy Collins’ Bootsy’s Rubberband. Clinton created the cultural art form known as P-Funk which included many kinds of expressions including a fashion revolution, distinctive album cover art, and cartoon characters.  Who can forget Clinton’s Parliament-Funkadelic outfits that made Funk the ultimate psychedelic experience. His musical contributions prompted many R&B acts to adopt Funky types of dress sampling not only his music but his eccentric funky style.  P-Funk is James Brown’s sound with an outer space underwater out of this world touch that leaves dancers with two fingers up and a thumb on the side on the dance floor.

The Ohio Players

Last but not least, we choose to recognize our own The Ohio Players, Dayton Ohio from (Westbound Records to Mercury Records). All of the bands from this city and surrounding areas — Faze-O, Lakeside, Sun, Heatwave, Dayton, Platypus, Slave, Roger and Zapp and many, many others – drew inspiration from the success of The Ohio Players. They were Dayton’s first band to reach gold and platinum status with worldwide album sales. This pioneering band bridged Funk with jazz, and rhythm and blues. It’s  horns, chords, high-pitched harmonies and iconic lead voices, solidified the Funk sound. Amazing artist like Junie Morrison’s voice on Pain, and Funky Worm as well as Sugarfoot’s “Owl Gerl” exemplify the sweet sounds of Funk!

Please join The Funk Music Hall of Fame & Exhibition Center, by welcoming these phenomenal artists as their first inductees.  Stay tuned for details on the Induction ceremony.
