4 course Puerto Rican Dinner

We are thrilled to be hosting Amanda Duprey Hernandez to share her love and passion for her homeland of Puerto Rico and its cuisine, people, and culture. Amanda was born in Guayama, and grew up in Philadelphia, PA. After moving to the mainland, it was imperative to her family to not lose its culture: they spoke only Spanish at home and at 9 years old, Amanda started to learn how to cook with her mom.
As Amanda shares, “It was an art form for multiple reasons: our culture has a rich history, and we were food insecure. So, finding the balance was key. My experience with food insecurity is what informed my food security work and my move to Ohio in 2021. Now, I speak on the importance of culturally appropriate food security and the importance of food sovereignty.” At this unique homecoming for Amanda to once again cook at MAZU, she has prepared a beautiful 4 course menu to pay homage to Puerto Rico today and an independent Puerto Rico of the future!
Amanda’s Menu:
1. Rellenos de Papa (stuffed potato balls)
2. Puerto Rican Gazpacho (inspired by a cold fish-based dish, not a soup!)
3. Yellow Rice with Walnut Picadillo
4. Dessert of Coquito Tres Leche Cake with Coconut and Almonds
Note: The first three courses are gluten free. A gluten free dessert can be prepared upon request.
