Chef Margot’s Manna in Centerville- Pretty Swanky!

Today I got a sneak peek of the new Centerville restaurant, that’s about a month away from opening. Manna Uptown, as it will be known, is Chef Margot Blondet’s newest creation that will feature a menu that is about 80% French inspired with a 20% Peruvian influence.   Chef Margot was looking through the dictionary for a name  for the new business when she came across Manna which means “food from the gods to feed the soul,” and knew that was it.  What was originally conceptualize as a bar has morphed into a restaurant with multiple dining rooms, 2 bars and a patio, that was created by joining 2 houses together.  One of the dining rooms will be the Versailles room, complete with a mural on the ceiling, mirrors and chandeliers. The main dining room, pictured below, will be upstairs and service by a 7 seat bar.

As described on their website, “Manna offers a taste of modern Europe and South America to any who extend a wanting hand. We aim to honor the artistry of the chefs and bar makers who’ve inspired us while defying tradition alongside.” expectation.

Inspired by the taste of modern Europe and the ambiance of the late 19th-century Victorian era, Chef Margot Blondet set out to create a sexy, sophisticated dining and cocktail experience.

Upon entering off the parking lot behind the building, you’ll enter the double doors and be greeted by staff as this antique desk.

Nestled in Centerville’s historic Uptown neighborhood, Manna offers its guests a journey through time and culture. The property maintains its original, historic architecture while housing Manna’s sleek, sensual cocktail bar and modern Victorian-era dining room both peppered with carvings, sculptures, chandeliers, and marble from Blondet’s travels across the globe.

The main bar has seating for 26, while the restaurant will seat about 150.

Chef Margot has again brought in Creative Cocktail Consultant Brian Van Flandern (who was the original trainer of the Salar bar staff) to create a menu of exotic cocktails, as well as train the staff in fine dining service standards, most commonly referred to as  Michelin Three-Star service.

Brian was named America’s Top Mixologist by The Food Network as well as one of the top ten bartenders and mixologists in the world. He’s worked at Michelin Star restaurants, has a top-selling cocktail book and been featured in notable publications such as the New York Times, USA Today and beyond!

Perrine shares, “we are lucky enough to have Brian in town this week training the Manna Uptown Front of House staff.” He started by teaching liquor history, sharing the backgrounds on the spirits, and paring theory and as I was leaving today the staff were arriving for service training that will allow Manna to offers a luxury experience to their guests.

It will be up to bar manager Jackson Wolph to maintain the standards Van Falndern is creating for the bar.  The bar will end up staying open a couple hours later than the dining room and having upscale cheese and charcuterie boards to serve once the kitchen is closes.

Chef Donivan Preston, who originally opened Table 33, has spent the past 4 1/2 years as the Sous Chef at Salar and will lead the kitchen at the new place.

He teased me with few menu items, including butter seared filets, prawns flamed in Hennessey and Beef bourguignon.

He also shared their pastry chef will be making a dessert using a recipe from Chef Margot’s grandmother- as well as a Lucuma ( a native fruit of Peru) Profiterole.

Perrine shared that they are planning a fundraising party for the leukemia and lymphoma society, where ticket proceeds will be donated to the charity.

Chef Margot has created a very upscale eatery and I can’t wait until they are serving! See you there!

Salar’s Reopening Benefits Dayton Children’s

Salar Restaurant and Lounge presented Dayton Children’s Hospital Burn Program with a $3,600 donation. The funds were raised by selling tickets for local eatery’s soft opening and grand opening events in September. Salar, located at 400 E. Fifth St. in Dayton, Ohio, reopened to the public on Oct. 1, just shy of a year after a devastating fire forced the local restaurant to shutter temporarily to rebuild.

The donation will underwrite the cost of burn kits for families in-need that financially cannot afford to purchase the necessary medical supplies to treat injuries.

Salar owner and executive chef Margot Blondet was touched by the support of the community during the time of the fire and felt that it was important to pay that support forward.

“Dayton has showed us the true meaning of community, that when things get tough, we come together to help one another,” says Blondet. “I felt a responsibility to share the kindness of my friends and neighbors to help families that are experiencing hardship.”

Children are especially vulnerable to burn injuries. Children under five years old are 2.4 times as likely as the general population to suffer burn injuries that require emergency medical treatment, according to the American Burn Association. Almost one-quarter of all burn injuries occur in children under the age of 15.

“We are so thankful for the generous donation from Salar Restaurant and Lounge,” says Franki Meier, BS, Donor Engagement Specialist at Dayton Children’s Hospital.  “It’s only through support like this that we can continue to provide the very best care close to home for the more than 350,000 children that need Dayton Children’s every year.”

Salar To Return This Summer

Salar Restaurant and Lounge co-owner and executive chef Margot Blondet announced that she has signed a lease for her popular chef-driven concept, marking her comeback to Dayton’s diverse culinary scene. Salar will re-open in the summer in its former Historic Oregon District location on 400 E. Fifth St.

The upscale French-Peruvian fusion eatery suffered devastating loses after an early morning fire broke out on Dec. 29, forcing the staff to cancel more than 350 New Year celebration reservations and the restaurant to shutter temporarily.

In asking Chef how she’s been filling her time, she shared , “I think I’ve worked harder in the last couple months working with the insurance company, re-negotiating the lease and dealing with the architects.  It’s been a real roller coaster of emotions, and by the way I don’t like roller coasters or surprises.”

“It’s time to get cooking again,” says Blondet, “The love and support that the Dayton community has shown me and my restaurant family is overwhelming. Now, we’re ready for the renovation journey that will refresh Salar with new ideas while honoring what our guests have come to cherish from our culinary and bar program.” 

She says they’ve been cleaning and packing away things that can be salvaged to get ready for the renovation and making manuals for the new vision.

The interior design vibe will evolve to embrace current trends, with a color palette that’s lighter, airier and more inviting. The new layout begins with a lobby that leads to a new wine and main bar area that will accommodate more guests than before, complemented by an expanded wine and spirits menu. A larger outdoor dining area will enhance the experience of customers wishing for an al fresco ambiance.

“While the loss was heartbreaking, starting over has given me the opportunity to dream bigger, to be more creative and to take more risks,” adds Blondet. “Dayton, I’m coming for you. Expect to be wowed.”

The construction phase will commence soon, pending permitting, and will continue through the next few months.  The building will be getting new a new HVAC system, new electric and plumbing.  It will be like a brand new building  with a grand re-opening expected in the summer. Construction updates and new information will be posted as it becomes available on Salar’s social media channels on Facebook and Instagram.

Live From New York: Brian Van Flandern Trains at Salar

Fresh new cocktails coming to the Oregon District!

It was in New York that an actor was working his way through school. The year was 2003; he had one more semester to go, and the bar he was working in was failing. He was no ordinary bartender. While working in theater and other pursuits, he had nearly two decades of bartending under his belt. Knowing he had one more semester to go, he agreed to take one more restaurant job in New York and work there until he was able to get “a real job”. The new restaurant was the brainchild of Chef Thomas Keller, who had already created the very successful French Laundry in California, and now wanted to expand it to New York. While working with the chef of Per Se to create the menu, and learning to pair wines with dishes, this bartender asked “Why can’t we use fresh ingredients and make great cocktails that pair with food?” This simple question lead to a rethinking of how food and cocktails can interact. He had to prove to the chef that, despite their higher alcohol content, you can create cocktails that went well with food.

After the initial terror and question of “What did I do?” subsided, experienced bartender Brian Van Flandern set out to prove his point. The quest included three distinct elements. The first was to make cocktails from fresh and local ingredients, something that had been spreading like a virus through the New York cocktail scene. The second was pairing great cocktails with great food, something he was sure could be done. The third, and this was the hardest sell for the consumer, was to lower the alcohol content so that the palate was not damaged by the liquor. He was looking through a list of the basic cocktails when he picked his battle: the gin and tonic. Gin was an element that he was familiar with, and how much more simple of a cocktail can you make than one with just two elements? As he dissected it, he started to learn about the history of the drink, really questioning how it was made. That led to Van Flandern making his own tonic water, importing powdered quinine from Brazil, well before craft and artisan tonics were in vogue. Combining his home made tonic water with a special gin from San Francisco, he created the Tonic and Gin Per Se. When renown New York Times Critic Frank Brunei gave his four star review of Per Se, he mentioned that cocktail by name. “And all of a sudden my bartending job became a career”, Van Flandern said with a smile and a laugh.

Brian Van Flandern, three star Michelin rated mixologist and world class cocktail educator and creator, met with me at Rue Dumaine to discuss all things cocktail. Two things strike you as you are talking with him: he is naturally very friendly and easy to chat with, and he is passionate about cocktails and how they fit into our current culture. He has a very impressive resume to stand on. He has cocktails in over forty countries, as well as a very thick book of places where he has shared his experience and passion. He is the author of two books, Vintage Cocktails, which is currently available and Craft Cocktails, which will be released by Assoline later this month. Like anyone who is passionate about what he does and where he is going, he is well versed in where his craft has been. “Prior to Prohibition in the United States, being a bartender was a respected craft, like a pharmacist or a cobbler. It was a trade that was passed down from father to son. These famous barmen were making their own tonics, their own tinctures, their own syrups.” He goes on, describing the flight of these great bartenders to Europe so they could keep making good cocktails. Europe became no better for cocktails than America, getting caught first in the worldwide Great Depression and then World War II. “By the time World War II was over, we had lost an entire generation of mixology and had lost the art of the cocktail.”  He talks about the evolution of the cocktail, not only in terms of how it went from strong in the 50’s and 60’s to sweet in the 70’s and 80’s, but how people perceived it and how consumer demand influenced it.

It was not until the late 90’s that the cocktail started to edge back to where it had been before prohibition. “Dale DeGroff started to do critical thinking like a chef. He took a recipe from a woman who had won a cocktail competition in Florida, and made a cocktail called a Cosmopolitan. He used fresh ingredients and quality spirits, balanced it out, and he made an amazing Cosmopolitan that became so famous in New York that Sarah Jessica Parker mentioned it in her show ‘Sex and the City’. That cocktail became a global phenomenon. That was only the beginning. Now we are seeing the great mixologists are emulating the great chefs, working with global, fresh ingredients, their balancing the acids and sugars, and they are creating original flavor profiles that are aesthetically pleasing to the eyes and the palate.”

Understanding where the cocktail has been helps Van Flanern see where it is going. Asking him about the next big cocktail trend, he feels that “we will never see a global trend like the Cosmopolitan again.” He sees bartending going in the same direction that the culinary world has been going; becoming more and more innovative, looking more to local and fresh ingredients to create their signature libations. He compared the growth of a bartender into a mixologist in the same way a cook evolves into a chef. Mixologists “innovate, they create, the do anything a bartender does, and more. They take it to the next level,” according to Van Flandern. Cocktails are no longer the big trend to look for, spirits are. People are embracing white whiskey, mescal, and pisco right now on the East coast, and it has been moving inwards through the country. The bigger spirits companies, like Diaego and Beam Global,  are also helping to move trends, polling to see what people want to drink and encouraging the distilleries they own to develop spirits in that direction. This has allowed smaller, boutique, small batch distilleries to grow, fuelling a revolution in smaller craft spirits.  “There is a lot of boutique, small batch, pot distilled distillations. We have seen a lot of boutique spirits are coming out where these guys are doing unique and innovative, cutting edge products in every major and minor spirit categories.”

Thanks to pioneers like Dale DeGroff, bartending has returned to the respectable trade it was before Prohibition chased bartenders to Europe, and their knowledge out of restaurants and bars. “It is an exciting time to be a bartender, globally”, offers Van Flandern, and he is right. Society’s palates have changed over the last two decades, and the explosion and expansion of craft liquors and spirits have given bartenders more options as far as ways to create cocktails. With the rising tide of skill and respect, the bar is no longer just a place for people to wait in a restaurant while their table is getting ready.  It is an integrated part of the dining experience, with cocktails being paired with meals like wine traditionally has been and craft beers were a few years ago. “In my professional opinion, the long term trend in the next five years, great Chefs are going to supplant themselves in communities throughout the nation,” Van Flandern notes. He has seen this trend spreading, starting in places like London and New York, and in recent years moving to smaller cities like Cleveland and Columbus. And once the trend hits a city, it starts to spread to other lounges and restaurants.

Mr. Van Flandern was recruited by Chef Margot Blondet to help give Salar, the restaurant she is creating, a globally inspired, signature cocktail menu. “We see great chefs like Chef Margot moving in to Dayton and settling down roots here, and then making commitments to great cuisine in Dayton, and making a similar commitment to her cocktail program.” That commitment extended to training the bar staff to make cocktails that had the same elements she was passionate about: fresh, innovative, exciting, locally sourced and the best in Dayton. Making great cocktails like that will also include training on the history of the spirits and the cocktails they would be making, so they understand them on a deeper level and can create new ones using the same philosophy. He assured me that all of their cocktails, while well crafted, will be delivered in a timely manner. If it is not exactly what you were looking for, the staff there will have no problems making it to your tastes. His customer first philosophy is one other thing that will be instilled into the bartenders he is training.

Salar is looking to open up in the next few weeks with not only fanfare, but with great ambition. Bringing a mixologist like Brian Van Flandern, with his years of experience and training, shows just how serious of an impact Chef/Owner  Margot and General Manager Harry Trubounis are looking to make in the culinary landscape of Dayton. The stage is set in the Oregon District for a new star to rise.

Former Sidebar location to become Salar Restaurant and Lounge

SalarSince the minute Sidebar closed last July, rumors have been circulating about a revival of the restaurant. Today, after months of planning, partnering and negotiations, Chef Margo Blondet and General Manager Harry Trubounis were finally able to announce that the lease is signed and the renovations are under way for the Salar Restaurant and Lounge to bring back to life the corner of Fifth and Brown Streets in the Oregon District. The name of the restaurant, Salar, is derived from a vulgar Lating slang for ” salt-encrusted,” which is so appropriate, since Chef Margot’s favorite seasoning is salt.

Featuring an exciting menu of Mediterranean-Peruvian fusion cuisine with French ChefMargotinfluences along with hand-crafted cocktails, the restaurant plans to be a reasonably priced, upscale, yet casual style restaurant. Chef Margot plans to feature an array of small plate entrees, distinctive salads, appetizers and pizzas, allowing customers to enjoy different courses should they choose to try a sampling of diverse dishes. Salar also will feature a wide selection of handmade cocktails created with house-prepared syrups, fresh fruit and juices, and only the finest spirits. Blondet will craft Salar’s menu, with entrée prices ranging from a $12 to $22 per person.

“Peruvian cuisine reflects not only the traditional dishes native to the area but also, through centuries of immigration, influences from Spain, China, Italy, West Africa and Japan,” Blondet said. “By integrating classical French techniques, our menu will consist of a fusion of influences that result in dishes that are both comfortable and unique. The outcome becomes an exciting twist, rather than a radical departure from the diners’ favorite foods.”

“This is exciting news for the Oregon District, downtown and the Dayton community,” said Dr. Michael Ervin, owner of the building in which Salar is located. “Interest in this space was extremely strong, which reflects growing interest from business owners in investing in a downtown Dayton location. I am confident everyone will love the fine food and cocktails at Salar, where they’re sure to have a dining experience like none other in the region.”

sidebar-5Salar also will provide on and off-site catering and carry-out dining will be available to lunch and dinner customers as well.

Saar plans to  be open for lunch Monday through Friday from 11-2 and at 4 pm. Monday through Saturday for dinner and closed on Sunday.  The dining room will be open Monday through Thursday until 10 pm, and Friday and Saturday until midnight. The bar will remain open until 2 am Thursday through Saturday.
