Dayton at Work and Play: Val’s Bakery

Our first visit to Val’s Bakery (25 S St Clair, Downtown)
People have suggested I try Val’s Bakery ever since they opened a few years ago. Val’s started out sharing space with Dished! in Kettering. After only 8 months, they opened their own location on Brown St. Just 6 months later, they had outgrown the space and are now in a larger space downtown.
A few days ago, Val’s Bakery won Best Bakery in the Best of Dayton competition, and I decided I really needed to try this place out. We went Saturday morning when downtown parking is free, and found a line outside waiting to get in. We used our time in line to talk to other patrons about what we should order. We opted for a plain croissant, an almond croissant, a blueberry-lime scone and a chocolate chip cookie.
We were glad to see that there was lots of seating, so we sat and tried two of our treats right away. My scone was amazing, and the plain croissant we ate that evening was as good as any I’ve ever had.
I don’t normally do food photography, but Val’s website talks about the importance of the laminations in making their European-style pastries. They say their treats have “hundreds of flaky layers that melt in your mouth,” so I thought I’d show a cross-section of one of their coconut chocolate croissants. I bought that at Val’s drive-through coffee bar (5707 Bigger) a few days after we went to the downtown location. I cut this one in half and shared it with my wife. We both licked our plate, so we’d get every crumb.
After people suggested Val’s Bakery, I waited a few years before I finally tried it. Then I bought their pastries twice in less than a week. That’s how good they are. I will be a regular.

An Update from Val’s Bakery

Back in July Val’s Bakery was visited by Cleveland foodie influencer Emily Pentecost and she posted a video about what she called “the best bakery in Ohio.”  The video has over 28K views on Tik Tok, went viral and just overloaded the bakery with business.

As owner Paige Woodie said “we were not at all ready or expecting the crowd we received” since the video.  So they struggled to keep up with the baking, triple their output and still couldn’t supply enough treats for the demand.  So she limited buying to two items per guest and still couldn’t keep up.

She just recently shared this update via facebook:

We’ve sold:
4,958 croissants
9,805 other bakery items
We’ve made you 3,765 coffees
We’ve served:
3,799 customers
2,483 of those NEW
We’ve missed our regulars but still have been fortunate to see 1,316 of you
We’ve bought:
3 new refrigerators
2 new prep tables
We’ve doubled our sheet pans & molds
Really doubled all our small wares
We’ve hired:
1 new front of house
3 new bakers
We’ve received:
Countless supportive messages & reviews
Countless nasty ones, too
I think I speak for all the staff when I say we’ve experienced every spectrum of emotion imaginable through this.
We are nearly one month into this craziness. Things are STARTING to level out but there is still much to do and change to improve the customer experience, the staff experience and the quality.
We are working on featuring other local bakeries items daily to pad our inventory and share the love our community deserves. As well as have regular popups on weekends of local makers and artists.
We are navigating this explosion of growth with as much grace and positivity as we can, and I just want to stop and say thank you. We love you. We hope to serve you soon!

Val’s Home Bakery To Open March 27th

Some things are just meant to be.  When Glo Juice Bar + Cafe announced they were moving in with their sister business, Butter Cafe, it created a space for Val’s Home Bakery to land on Brown Street.
The business, which is inspired by owner Paige Woodie’s amazing grandmother Val, has struggled to find a home. They were given a temporary space in Kettering, by local entrepreneur Katie, who runs Dished. A space in Springboro ended up not working out. But about six weeks ago things worked out and they are quite excited about opening up on Brown Street next week.
They’ve passed their final inspection and have just announded they will be opening on Monday, March 27th at 8am. They will have a case full of Val’s treats, made to order breakfast sandwiches and toasts, hot, iced and blended coffee and matcha, kids options and seating for you to enjoy your goodies on a cute plate and ceramic cup.
They are giving their  team a couple weeks to acclimate and learn the ropes before their Grand Opening on Saturday, April 8th.
