Welcome to FOOD ADVENTURES‘ bi-weekly feature called

“Small Bites,” which is simply a quick take on some of our favorite local food items.

Here are our “Small Bites” for 2/16/2012:

 

THE BANANA RUM CRUNCH CREPE at BOULEVARD HAUS:

We appreciates fantastic food from German heritage.  Boulevard Haus in Dayton’s Oregon District is a favorite stop.  This German restaurant, with a contemporary twist, has developed one of the greatest desserts that we have ever eaten.    It is called the Banana Rum Crunch Crepe.  This monstrous crepe is $6.95 and can be shared among your entire table.  It is loaded with bananas, white chocolate, rum sauce, and is topped with pecan brittle and whipped cream.  This dessert is a MUST, and sticks out among the other amazing menu items at Boulevard Haus.  The crepe tastes so good that it is like an Oktoberfest in your mouth!

 

THE PEEL AND EAT SHRIMP at DUNAWAY’s BEEF and ALE:

Perfect Peel and Eat

Nothing beats a great appetizer to get your taste buds tingling.  Food Adventures has found one such joy at Dunaway’s Beef and Ale in Troy, Ohio.  Their Peel and Eat Shrimp are fresh, crisp, and spiced just perfectly.  This addicting menu item goes perfectly with a pint of beer, and Dunaway’s has a great selection of drafts.  These shrimp are definitely one of the best cold appetizers around.  The Cajun spice dust on the shells helps create the perfect flavor that will have you craving more.  The shrimp are large and can be ordered by themselves, or part of a full dinner deal.  Check the specials, and you may get to have this treasure at a reduced price.

 

THE BIG RAGU SUGGESTS:

99 Cent Hand Rolls at Saya

THE 99 CENT HAND ROLLS at SAYA:

In Fairborn, one of the best kept secrets is a restaurant called Saya.  Located on Kauffman Road, they have some of the freshest tasting sushi around.  Their most superb deal is the 99 cent hand roll.   Let’s face it, sushi can be expensive, so take advantage of this item’s bang, for less than a buck.  The Big Ragu prefers the spicy tuna hand roll.  Put Saya on your Food Adventure Hit List, and you wont be disappointed in their selection.

 

 

THE SUPER DUPER CHEESESTEAK CHALLENGE at THE SUBMARINE HOUSE:

16 Inches of Heaven

Let the Big Ragu suggest a tasty, food challenge for those with big appetites.  The Submarine House has held a yearly event called the Super Duper Cheese Steak Challenge.   Actually, it is going on right now until March 18, 2012.  If you can eat a 16 inch Super Duper Cheesesteak in 16 minutes,  it is FREE !  The “Super Duper” version of the cheesesteak means 3 times the meat and cheese as their normal 16 inch sub.  The cheesesteak must be topped with the “works,” which means mushroom, onion, hot peppers, mayo, lettuce and tomato.  If your time is good enough, you can move on to the finals at a later date!  The Big Ragu ate his sandwich in 6 minutes, but was nowhere near the champion’s time of 2 minutes.  The cheesesteak is fantastic and the event benefits Children’s Medical Center of Dayton.

Boulevard Haus Dining Benefits Ronald McDonald House

Boulevard Haus, located at 329 E. Fifth Street in the Oregon District, is getting into the holiday spirit and invites you to join them to celebrate the German Way. House specialties include  sauerbraten, gulasch, galettes, beef rouladen, sausages and other traditional German fare, complimented by a selection of German beers and wines.

When you dine at Boulevard Haus through December 16th, 10% of your food bill will be donated to the Ronald Mc Donald House  in honor of St. Nicholas.
Owner Eva Christian explained that St. Nicholas is celebrated in Germany on December 6th, the anniversary of his death.  St. Nicholas dedicated his life to serve God and used his entire inheritance to assist the needy, sick and suffering, in particularly children.

RMHC of the Miami Valley Region, Inc. provides a temporary home-away-from-home for families of critically ill, hospitalized children and supports efforts that improve children’s health within our region.

Boulevard Haus Hours:
Lunch Wed through Fri 11:30 am to 2 pm
Dinner Mon through Sat starting at 5pm

10 ?’s with Boulevard Haus Executive Chef Rae Rosbough

Some people just know early what they want to be when they grow up.  As a youngster, when Rae Rosbough’s mom encouraged her to go outside and play, she found excuses to stay inside and organize the kitchen cabinets.  She says she knew it was where she belonged.  Going to high school in Miamisburg, she couldn’t wait for her junior year so she could register for the vo-tech cooking classes.  Upon graduation she headed to Johnson & Wales to pursue her culinary education in 2000.  By 2002, degree in hand she returned to Dayton and got her first job at the now defunct Mediterra.  From there she moved to Cafe Bouelvard, then to Cena for a 1 year stint, and then back to usher in the new concept of Bouelvard Haus in the Oregon District.  This month Boulevard Haus celebrates teh beginning of their third year in business.

Chef Rae was kind enough to take on our 10 questions:

What is your favorite ingredient to cook with?

whole shallots

Shallots- I love the flavor that shallots add to almost any dish hot, cold, savory and sometimes even sweet. They add so much to a dish, without overpowering it, that it may not be a single recognizable flavor, but one that blends and enhances each dish.

What ingredient do you dread?
Fillo dough- I do not care for working with is dough because it shreds, crumbles and dries out quickly…But I love to eat it!
What’s your favorite dish to make?
Duck confit- I’ve loved this dish since the first time I tasted it at Napa Valley Grille in Providence Rhode Island back in the nineties and I’ve been perfected my technique for it ever since.
What’s your favorite pig out food?
I scream, you scream, we all scream for ice cream! Any flavor anytime.
What restaurant, other than your own do you like to dine at in the Miami Valley?
I’ve eaten at Rue Dumaine several times and have loved it! It is a comfortable environment with immaculate food and professional, friendly service. what else could you ask for?

 

What’s your best advice for home chefs?
Watch or buy the cookbook of the show America’s Test Kitchen on PBS. it is a great learning tool that takes you step by step through making delicious dishes and teaches you the science behind the techniques. I love the show and own the book. My husband, sister and brother in law, all home cooks, use it religiously as do I.
If you could invite any 4 guests to a dinner party who would they be and why?
Dinner party, who has time for that? I can’t name just 4. I’m not a very star struck person and I feel like food is a comfort and something that brings people together.

 

Who do you look up to in the industry and why?
Gordon Ramsey– I want to be a household name and a millonaire duh. He also gets to help people achieve their goals. Which is nice no matter how big of a jerk he likes to appear to be.

What do you do in the Miami Valley on a day off?

I’m a very simple person I like to hang out at home with my husband, we also enjoy hanging out in the Oregon District or during the season we love going to Dragon’s games.

Share a kitchen disaster, lucky break or other interesting story:

It seems like all disaster stories end in a lucky break, or you just make your own luck. There are so many of them, why can’t I think of one? Refrigerators going out, no dishwasher, people not showing up for their shift, power going out in mid service. convection oven down. So, so, so many but that’s life in the restaurant biz. As for a lucky break, I think that knowing that this is what I wanted to do from a young age and pursuing that dream is a lucky break! The fact that I can get up each day and make food, and enjoy what I do  for a living, and get paid for it is an amazing feeling. There are a lot of people out there that can’t say that.

Jane’s Best Bets (4/6 – 4/10)

It’s April, so don’t be fooled by the people that tell you there is nothing to do in Dayton!  There are many great things going on here this week!

On Wednesday, picture yourself in one of the Landscapes by Gregory T. Davis or the Landscapes by Monique Janssen-Belitz, both at Sinclair.  At the University of Dayton’s ArtStreet, attend Patrick Dougherty’s Stickwork’s Photography Exhibit.  All you opera lovers should attend Opera Preview On Campus: The Daughter of the Regiment at Wright State.  Everybody needs to eat, so head to the Oregon District’s Boulevard Haus where Sausages, Burgers, and Sandwiches will be 25% off!  Afterwards, wise men say that you may want to get “All Shook Up” at Victoria Theatre.

On Thursday, make your way to the Schuster Center to see Nick Clooney, an award-winning journalist, author, TV personality, and activist (and the father to George Clooney!) as part of the Junior League of Dayton Town Hall Lecture Series.  Over at the University of Dayton, the most talented winter guards around the world will be competing in the 2011 WGI Color Guard World Championships.  Jazz your life up a bit by attending the Vectren Just Jazz Series: Maggie Green and the Brazilian Jazz Connection at the Dayton Art Institute.  In downtown Miamisburg, head to A Taste of Wine for their Greek Wine Tasting.  All you theater lovers should head to the UD for Smoke on the Mountain or Victoria Theatre for All Shook Up.  And if you love baseball, I hope you’ll be at the Dayton Dragons’ Opening Day as they take on the Bowling Green Hot Rods!

On Friday, there will be several opportunities to support some wonderful non-profits in the Miami Valley, so get out and have fun for a cause!  At the Greene, they are Going Blue for Autism Awareness – when you make select purchases at both The Wine Loft and The Funny Bone, a portion of the proceeds will be donated to local autism charities.  At Town & Country Shopping Center, check out the Inner I Gallery & Partners For Community Living – Opening Reception, in which fine art created by artists with developmental disabilities will be on display and for sale.  Over at the Schuster Center, enjoy live music, great food, drinks, a silent auction, raffles, and much more as part of the The Great Escape!  All proceeds will directly benefit the Dayton Chapter of the American Red Cross to aid in disaster relief.  (I’m helping to plan the event so I hope to see you there!)  At the Hope Hotel and Conference Center, you will be able to support another great cause, We Care Arts, as they have their 2011 ‘Happy Days’ Auction.  Also on Saturday, you can enjoy Half-Price Happy Hour Pizzas at Oregon Express.  Make your way to Fifth-Third Field to catch the Dragons as they play the Bowling Green Hot Rods.  Some theater options include All Shook Up at Victoria Theatre, Joseph and the Amazing Technicolor Dreamcoat at The Playhouse South, The Boys Next Door at the Dayton Theatre Guild (I hope they’re cute), Close Ties (a family drama that brings an understanding about Alzheimer’s ) at the Kettering Health Network Theater, and Smoke on the Mountain at UD.  Also, you’ll have the opportunity to check out the amazing documentary The Elephant in the Living Room presented as part of the UD ArtStreet Friday Film Series.

On Saturday, participate in the Run for Congo 5K at Wegerzyns Garden Center.  Afterwards, it is perfectly acceptable to stuff yourself with pancakes at the Kiwanis 6th Annual Pancake Breakfast at Christ United Methodist Church.  If you love playing games (the nice kind, not the mean kind), head to Game Day at Your Library (the Dayton Metro Library’s East Branch).  Over at the UD Arena, you will be able to check out the 2011 WGI Color Guard World Championships.  If you love flowers, head to the Dorothy Lane Market School of Cooking for their Tropical Flowers Arrangement Class.  Bring out the artist in you by participating in the Art-Making & Historical Touring (Dayton Visual Arts Center) or the Get Creative Workshop – Visual Journaling (Dayton Art Institute).  Also at the Dayton Art Institute, you will be able to catch the Vanguard Concerts: Graffe String Quartet with Pianist Michiko Otaki.  Theater options for Saturday include All Shook Up (Victoria Theatre), The Boys Next Door (Dayton Theatre Guild), Close Ties (X*ACT, Xenia Area Community Theatre at the Kettering Health Network Theater), Joseph and the Amazing Technicolor Dreamcoat (The Playhouse South), and Smoke on the Mountain (UD).  And if you miss football season, be sure to check out the Dayton Silverbacks as they take on the Marion Blue Racers.

On Sunday, start the morning off with All You Can Eat Brunch at Yankee Trace.  Then, eat some more at the Taste of Greene County at the Nutter Center.  Take the family to see the Dragons play the Bowling Green Hot Rods…plus Charity Cuts on the Plaza and McDonald’s Friends & Family Day at Fifth Third Field.  Get your legs moving for the Kettering Spring Into Health 5K Run/Walk.  If you love music, listen to the Dayton Philharmonic’s ‘The Symphonic Mozart’ at the Dayton Masonic Center.  Or head to UD for their Jazz Faculty Recital.  And finally, don’t miss your chance to catch All Shook Up at the Victoria Theatre.  Thank you, thank you very much for reading.
