New Mural To Take Shape on Levitt Dayton’s Walls
Work on a mural designed by local artist Brent Beck will begin this month at the Levitt Pavilion Dayton. The architectural design of the Levitt was an inspiration, along with including the commissioned poem by Sierra Leone The Contemporary Dayton led the call for artists, and a committee of Levitt Dayton staff, board trustees and local stakeholders, reviewed the submissions for the mural to bring public art to the Levitt and with the intent to share the poem with the community.
“The mural design is inspired by the clean angular geometry of the architecture and a dynamic sense of rhythm and spirit found in music, poetry, and the community,” said Beck. “The compositions are intended to complement the architecture, not to obscure it. The elements are meant to represent the sun rays filtering through the skyline bringing joy and life to a once forgotten corner of Dayton. The Levitt color palette has been utilized to represent the pavilion’s beautiful natural setting among the lawn, sky, and sunshine which is so wonderfully brought to life in Sierra’s [Leone] poem.”
Sierra Leone’s poem will be featured in full within the mural so that anyone can read it as they attend concerts or walk through the park. The poem will be performed at the first concert of the 2020 Eichelberger concert season.
The artist executing Beck’s design is Atalie Gagnet, a Dayton, Ohio native. Atalie began her mural and logo signage business in 2003. After graduating from The School of the Art Institute of Chicago, her career in art led her to Brooklyn, NY, where she was a studio manager for a prominent artist, executing his work and managing projects. From there, she worked with the exhibition construction crew at the Guggenheim Museum. She has had the privilege of sharing her painting skills locally and internationally managing and installing outdoor murals up to 7,000 sq. ft. for Architechtural Digest for Art Basel Miami, Graniti, Sicily, Rockford, Illinois, Cincinnati and Dayton, Ohio.
10?’s with Chef Katy Fischer
Katy Fischer is originally from Urbana, Ohio and always knew she wanted to become a chef from an early age. She studied at the Pennsylvania Culinary Institute in Pittsburgh. After graduating, she traveled the US working in many five star resorts polishing her talents in the kitchen. One of her favorite places was Savannah, Georgia where she worked under a French Chef who taught her the art of Southern cuisine.
In 2011 Katy moved back to town to spend time with her family and met the love of her life, Jeremy. She has been with Coldwater Cafe in Tipp City for 8 years and she has been the Executive Chef since 2015. Her culinary talents have brought many new customers by enlightening their taste buds with her unique creations. When Katy isn’t creating masterpieces, she loves spending time with Jeremy in Key West and with their three dogs, Lu, Merle, and Huckleberry, whom she considers her children.
Katy took some time to answer our Chef 10? interview and here’s what she had to say:
What is your favorite ingredient to cook with?
My favorite ingredient to cook with isn’t a specific ingredient…but I would say spice. I love spicy food. The spicier the better. At Coldwater, I definitely hold back the heat as many people aren’t as crazy about it as I am. But let me be clear, I do not like things to just be hot, they have to be flavorful as well. There are so many ingredients out there that infuse dishes that I wish people would be more open to. There are so many amazing chiles that are underutilized. I love harissa, curry, masalas…there are just so many.
What ingredient do you dread?
Hmmm. I would have to say veal. I personally do not cook or eat veal. For my own personal reasons. I am an animal lover and not a lover of animal cruelty.
What’s your favorite dish to make?
Soup! Random answer, I know. But at Coldwater, we are known for our soups. We have a Soup of the Day and I am always creating new things. You can make soup out of anything. I just made a green tomato bisque full of fresh basil and lime juice and topped it with a crab and jalapeno salad. Killer.
What’s your favorite pig out food?
Oh gosh, well I’d say sushi….I love sushi! I could probably eat an entire sushi boat by myself. Ha…and that pickled ginger, yum!
What restaurant, other than your own, do you like to dine at in the Miami Valley?
I love Thai Nine. Like I said before, I’m a spicy kind of lady…I always ask what the hottest number is when I order and then ask them to make it even spicier. They have amazing Curry and Pad Thai. I also love the “surprise” sushi roll, that’s always fun. I love that when I go there, they treat me so well. They know I am the Chef at Coldwater and I love that the employees are fan of us as well. I love the support.
What’s your best advice for home chefs?
My best advice to Home Chefs would be to not take things too seriously. Recipes are guidelines. Have fun with what you’re doing and try new things, because I promise you the best things in life were created by accident.
If you could invite any 4 guests to a dinner party who would they be and why?
Four guests (can I choose alive or dead?) 1. Emeril Lagasse – he was one of the reasons I decided to become a Chef. His cooking shows were about all I watched as a teenager. I was always asking my Mom to get me the ingredients for his recipes I saw him making and she did! 2. Elton John – he’s done it all. His music is amazing, he’s not afraid to stand out in a crowd, he’s an activist, he’s an inspiration, and he just seems like he’d have a lot of great stories to tell. 3. Ellen DeGeneres – she’s hilarious, witty, kind, genuine, generous, an animal lover and activist, and I know we would have so much to talk about. 4. My Mom – she’s my number one fan. She’s always been there supporting me every step of the way. She’s the main reason I became a Chef. She was always cooking and baking and I loved being around her and doing anything she was doing. I still do.
Who do you look up to in the industry and why?
Honestly, I look up to all the Chefs I see killin’ it on Instagram. The chefs who are always being tagged on True Cooks. The chefs that are out there day in and day out, busting their butts, making delicious and beautiful food. The chefs who are driven by the passion we as chefs all have inside of us. Being a chef is not for the faint of heart. When you’re passionate and dedicated enough to be a chef, you may not see the light of day. You spend it in a kitchen, creating art to make other’s happy. You go home, sleep, and get up and do it again. All for the passion.
What do you do in the Miami Valley on a day off?
On my days off I enjoy kayaking in the Great Miami near Troy and Tipp City, hiking in Yellow Springs, trying new wineries, riding my bicycle, walking my three pups, gardening ( I plant and take care of lots of succulents)
Share a kitchen disaster, lucky break or other interesting story:
Oh the kitchen stories I could tell you- well just the other day we had sold roughly 70 Charcuterie kits and I was prepping more cheese when my hand slipped off the tip of my knife. My knife went through my hand cutting through three layers of skin. 6 stitches later, I came back to work, and everyone got their Charcuterie boards.
Dayton at Work and Play: Food 4 The People

Shoes 4 the Shoeless is one of my favorite Dayton nonprofits. They provide shoes and socks to the many children in the Dayton area who are in desperate need. With schools closed and social distancing rules in effect, the organization’s planned events needed to be cancelled. Instead of taking a break, they have shifted to supplying food to many people in need of help.
We participated in Round 3 of this effort. We signed up to be a Food Box Captain, which meant that we (and anyone we could talk into helping) needed to assemble a specific list of groceries (2 loafs of bread, 2 cans of fruit, etc.) and deliver that food to First Baptist on April 27. Round 4 signups are currently underway, for food to be delivered to the church on May 18. Details are at

Dayton Christian grad fights for COVID-19 testing
As many stay-at-home orders have lifted across the country, the idea of going back to health before going back to work has become pivotal to the national COVID-19 discussion. Among those fighting for the growing need to accelerate widespread testing is Justin Bellante, Co-Founder, President and CEO of Atlanta-based BioIQ.
“How do you get people back to work? We liken it to after 9/11,” said Bellante, a Dayton Christian High School graduate formerly of Englewood. “After 9/11 no one wanted to get on an airplane. And it wasn’t until the TSA was created and so much testing, measurement and screening was (implemented) at airports that enough confidence was provided to the general public that it was safe to get on an airplane again. So, when you think about going back to work it’s really analogous to that. Are we going to, as private employers or public society or governments, start to create an infrastructure and framework where we feel it’s safe to go back to work? And, of course, the most important thing is testing. So, in an ongoing way, you have to know if you’re safe in that environment. The cornerstone of a back to work program has to be ongoing assessment and contact tracing, which has been validated in South Korea and other countries as the recipe to manage the virus until we learn more or develop a vaccine.”
Founded in 2005 in Santa Barbara, California, BioIQ, a healthcare engagement and clinical adherence technology platform company, recently added antibody testing to its numerous COVID-19 initiatives, including saliva RT-PCR diagnostic testing, for health plans, employers and government agencies. The company is particularly conducting quantitative antibody testing, which is done in a laboratory on a large clinical analyzer with an accuracy of 95 percent or more, according to Bellante.
“The RT-PCR test (determines) whether or not someone currently has the virus,” he explained. “The antibody test is more downstream. It determines if someone previously had the virus and if their body produced antibodies to fight the virus. Antibodies last for a long period of time. What’s so interesting about this is we think over time that being able to do two of those antibody tests will help us understand if someone is immune to the condition. Meaning, those are people we would value in society because they can’t get the virus again. But epidemiologists and virologists don’t know right now if you can get it again. Is this like the common cold, which you can catch every couple of months? Or is it like the flu, which you can get for one season, you fight it, and your body builds immunity to that strain until the following flu season when the flu mutates. We don’t know if the coronavirus is going to mutate. Season by season, is it going to be treated the way we treat the flu now? Or can your body even develop enough immunity? There have been cases recently in South Korea in which people had coronavirus, recovered, and two months later got it again. Because testing wasn’t available across the U.S., a lot of people probably had it or think they had it and now they want to know if they had it. It’s too late to do the PCR testing because the virus has probably left their bodies but the antibody testing will tell them if they had it.”
Bellante, who holds a bachelor’s degree and a master’s degree in materials engineering from Case Western Reserve University, also endeavors to bring the company’s initiatives to people on a wider scale. For example, there can be noticeable contrasts between labs with testing capacity in Arizona versus labs in New York lacking capacity.
“Even if you have testing available, it doesn’t mean you’re testing people,” he said. “We’re really focused on leveraging our technology platform to get testing capacity to the people that need them. You have to have workflows to get tests to hospitals, screening tents and critical infrastructure workers at their place of work such as a factory or retail distribution center. Creating workflows to get testing to people is the major challenge. And even in COVID-19 testing, we’re already starting to see disparities and outcomes between different racial, ethnic and socioeconomic groups who are being more impacted.”
With mid-April statistics indicating roughly 3.2 million COVID-19 tests have been conducted across America, which accounts for about 1 percent of the total U.S. population, Bellante is aware of the long road ahead. However, with guidance from a Public Health Advisory Board including Regina Benjamin, the 18th U.S. Surgeon General, he is grateful for the insightful perspectives allowing the company to thrive while helping to save as many lives as possible.
“We are in a crisis,” he said. “This is a pandemic. There are a lot of unknowns in this unprecedented situation. This isn’t going to go away May 1 or May 15 and the world is going to go back to normal. We’re more than likely going to deal with this situation for many months to come. We have to have urgency but not be in emergency mentality. We have to have urgency but we have to be thoughtful.”

The Women’s Board of Dayton Children’s Hospital online auction is live! This group of 40 community leaders who support the hospital through outreach, volunteerism and fundraising didn’t exactly plan for their spring fundraiser to be online, but with covid-19, things changed.
Today they have launched their “In This Together, At Home” virtual auction. You can bid on items from the safety of your own home. All winners will be notified when the auction closes at 10pm on May 8.
