Martin Luther King III To Speak at Free Internet User Rights Conference

EF Hutton, Inc., headquartered in Springfield, Ohio, has announced open registration for the first in an ongoing series of professional conferences focused on a broad spectrum of national issues. The “EF Hutton Talks Conference Series” inaugural event will cover issues surrounding the rights of users in social networking. Slated for June 25, 2018, 8 am to 5 pm, the primary site will be at the Courtyard by Marriott, in Springfield, Ohio, with simultaneous satellite locations to be announced.
The fallout from the Facebook – Cambridge Analytics data breach left even Congress scratching their collective heads about how to better regulate the industry to protect users. Additionally, massive social networking companies are capitalizing on user data and providing nothing in return. This conference will address the issues of data privacy, individual user compensation and more.
The “EF Hutton Talks Conference Series” is designed to shed a national spotlight on specific issues in a wide range of topics affecting Americans. The overall goal is to bring together thought leaders and business executives from industries like social networking, data security and personal finance to define and discuss problems and potential solutions to issues like user rights, privacy, the U.S. savings crisis, and more. Each conference will address topics through panel discussions, keynote speakers and breakout sessions.
The featured speaker will be the son of Reverend Martin Luther King, Jr., human rights activist, Martin Luther King III. Mr. King will be speaking on the value of the individual in a world where consumers are used for their digital information, go uncompensated and left vulnerable.
“As an industry, we have a responsibility to the public to address issues of privacy and user rights, not because we are compelled to do so by congressional subpoena, but because it’s the right thing to do,” said Gery Deer, EF Hutton Vice President of Communications and Public Relations. “This conference series is designed to help begin an industry-wide dialogue to explore ways financial technology companies can help defend the rights of all internet users.”
Registration is free but seating is limited. To register and for full details including a complete schedule of the sessions in this exclusive conference, visit conference.efhutton.com.
Brunch Club Repairs More Extensive Than Expected
A kitchen fire on April 20th at downtown Dayton’s Brunch Club closed the local eatery for repairs that were guestimated to take a few weeks to repair.
An update today from Brunch Club owner Jim Vari shared this news:
After meeting with the engineer and restoration people last week, the restoration company started tearing out the kitchen for repair and the time frame for completion has been extended considerably, considering all the contractors, code updates, permits etc. Their expected completion for reopening is now scheduled for sometime in September.

Bars Serving Up Cucumber Inspired Cocktails on World Cucumber Day
As our regular readers know we’ve been highlighting food holidays for years, sharing the history when we can find it, fun fact and great food and drinks relating to the food of the day. Well Thursday, June 14th happens to be World Cucumber Day.
Cucumbers are high in water and low in calories, fat, cholesterol, and sodium. They have a mild, refreshing taste and a high water content. They can be refreshing and pleasant to eat in hot weather and help prevent dehydration. The term “cool as a cucumber” is actually derived from the cucumber’s ability to cool the temperature of the blood. Also when applied topically, cucumber really does cool the blood and eases facial swelling, which is why cucumbers are so popular in facial regimens. There are over 33 varieties of cucumbers, the most commonly available is the hothouse or so-called English cucumber. It is large, with a dark green skin, and few or no seeds.
Other types include:
Armenian, or snake cucumbers: These are long, and twisted. The skin is thin and dark green with pale furrows. These are often used for pickling.
Japanese cucumbers: These are dark green and narrow. The skin is thin with small bumps on it. They can be eaten whole.
Kirby cucumbers: These are often used for dill pickles. They have thin skin and small seeds, and they are crispy.
Lemon cucumber: These are around the size of a lemon, with pale skin. The taste is sweet and delicate.
Persian cucumbers: These are shorter and fatter than the hothouse cucumber. They are crunchy to eat.
But this year there’s an even cooler way to celebrate World Cucumber Day! Hendrick’s Gin is a brand of Gin produced by William Grant & Sons in Girvan, Scotland, and launched in 1999. In addition to the traditional juniper infusion, Hendrick’s uses cucumber and Bulgarian rose to add flavor. For several years now Hendrick’s celebrates this day and wishes to spread love, understanding and appreciation for cucumbers everywhere and invite all those with a curious mind to celebrate World Cucumber Day on June 14 to cultivate and embrace their very own unusual side.

Hunger Paynes Beer & Wine Garden Now Open
Dayton’s newest restaurant, Hunger Paynes Beer & Wine Garden has quietly opened inside the Dayton Mall. Andrew Payne, owner/operator the of Hunger Paynes food truck has been working on this for well over a year. The concept is simple 12 local beers on tap, Ohio wines and of course the croquettes made popular on his food truck.

Hunger Paynes on the first floor of Dayton Mall

Andrew Payne uploading the menu on the first day of business.
Asking Andrew how he came up with the concept he shared that the owners of the Dayton Mall, Washington Prime Group, actually approached him with this concept. They have done a couple of similar projects in their other properties, in Muncie they have a place with 4 beers on tap that’s about a third of the size of this one and they wanted to pilot a bigger concept here in Dayton. Andrew signed the lease in August, but there were a lot of delays, as this is a pretty new concept and it took the mall, Macy’s and Hunger Paynes some time to work out all of the logistics.

Wine Slushy
Payne, who started his food service career at the Wright Patterson Air Force Base Officers Club as a busboy at 15, has worked in many different food environments. He was part of the opening team of Quaker Steak & Lube, worked at NCR Country Club, Cracker Barrel. He went on to get his culinary degree from Hocking College. He came back and opened the Filling Station with some friends and then went on to become a sous chef before moving up to Executive Chef at both the Nutter Center and the Dayton Convention Center. He left the convention center when he opened the Hunger Paynes truck in 2013, though he still goes back to help form time to time when they have big events. Andrew’s wife and business partner Amie is a CPA and that makes her the perfect person to handle the books and paperwork for Hunger Paynes. Also part of the team for this new venture, Missy the general manager and Adam who will manage the kitchen.

The “stupid awesome pretzels”
Andrew explained how the concept of just serving local beer on their 12 taps was decided and he said “it’s my way to give back to all the local breweries that were so good to me and all the other local food trucks. We’ll also feature local wines, when possible and the sweet Hunter’s Red from the Winery at Versailles was the inspiration for our signature Wine Slushy.” They’ll also carry a Moscato from Italy, and some Napa Valley wines as well. They will also carry rotating bottled beers and feature cans of soda. Plans for a happy hour are still under way and will be added soon.
The croquettes are the mainstay of the menu but you’ll also find a a cheese and meat platter with some upscale cured meats, a cheese only platter featuring a white truffle goat truffle pretzel bites as well as a couple of salad options and wraps. Payne shares that they’ll have to judge the appetites of his guest, and will make changes to the menu as needed.

chicken bacon ranch wrap
The Grand Opening Celebration for this 42 seat eatery is Saturday, June 9th. The first 100 guests that order a beer will receive a logo’d pint glass and Payne shares there are over $10,000 worth of give-aways planned, including some mini fidget spinner bottle openers. The Mall has booked live music from 1-6pm.

Mac & Cheese croquettes
The Wine & Beer Garden will open one hour after the mall opens and stay open one hour after the mall stores close, allowing the 500 employees of the Dayton Mall to have the option for an after work drink and snack. Hours may change after they see what the flow of business is like and Payne shared he has plans for painting parties and trivia to be added soon.
Payne also operates The American Croquette Company, making and distributing modern forms of the classic croquette for sale to restaurants. You can find these locally at Kings Table and JD Legends, with plans for broader distribution in the works.
And don’t worry, the Hunger Paynes Food Truck will continue to operate as usual.

Spirit of America in a Bottle with Indian Creek Distillery

Joe and Missy Duer
It’s not easy putting history in a bottle, but Joe and Missy Duer have resumed a very old family tradition that allows them to do just that with their Artisan Farm Distillery~ Indian Creek Distillery, located in southern Miami County.
“Making whiskey the old fashioned way, not the industrialized way, is an art and flows out of passion and intuition which makes for a very artistic process,” Missy said.
Missy Duer comes from a long line of millwrights and distillers by trade. Her forefathers moved from Pennsylvania and settled in Ohio before it was recognized as a state. Missy’s great great great grandfather Elias and his two brothers built a grist mill along Indian Creek which was completed in 1818. Elias purchased the farm in 1820 and built a brick distillery to utilize the excess grain from the large grist mill. The demand for whiskey was great- a bonus for the ambitious Staley family. Staley Rye Whiskey became known for its quality and customers traveled for miles to have their jugs filled. The business flourished for 100 years involving 3 generations of Staleys until Prohibition put a halt on whiskey production in 1920.
“From 1933 until about 15 years ago, you could not build a distillery in the state of Ohio, but recent law changes have allowed my husband Joe and I to bring my family’s distilling legacy back to life,” Missy said. “Most importantly was that my great-grandfather, George Washington Staley, saved the stills, mash tubs, fermenters and assorted distilling equipment from the revenuers during Prohibition. We also have the original Rye Whiskey recipe!”
The Duers have a modernized facility on their beautifully preserved family farm where the distilling takes place, but they operate with an “old school, old rules” mentality crafting whiskey like the Staley forefathers, including use of the original copper potstills. The stills are the oldest working stills in America today. They follow an old, open-top mashing and fermentation process where the weather plays an important role in the process.
“There are limitations with open-top fermentation and mashing. You run into weather considerations because changes in the weather give you different yields. The reason being, mashing — which is the conversion of starch to sugar with the mixture of grain and hot water that takes three or four hours — if there is a drop in the barometric pressure, the yield of sugar is reduced,” Joe said. “In fermentation, which is the conversion of sugar to alcohol, there can be situations where there is electricity in the air from thunderstorms that will stop the action of the yeast being used. Once the storm is passed, the yeast can be reactivated but that can delay fermentation and the production of alcohol. All of these limitations and problems could be solved by not doing the open-top fermentation but that’s not the way the old boys did it, so we aren’t doing it that way either.”
There were numerous challenges in figuring out how to make Pre-Prohibition whiskey; Joe did most of the distilling when they first re-opened in 2012 and he had a tremendous challenge learning what the Staleys used to know.
“It was a steep learning curve because we were recreating history, and all the old timers are gone who I could ask,” Joe said. “We had to interpret old letters and recipes where the initial guidelines were to ‘heat your water and cool your water.’ That’s very interesting to me because I didn’t know what that meant until I found that heating the water consisted of being able to hold your hand in the water for one minute and cooling the water meant bringing it down to the temperature of fresh milk from a cow, which proposed an issue, because I didn’t have a cow.”
Indian Creek Distillery’s whiskeys are available at the distillery and in over 150 state agencies in Ohio. The Duers also offer a delicious locally sourced maple syrup (StillHouse Maple Syrup) that is aged in their used rye whiskey barrels.
“The distillery is open seven days a week and attracts three types of people: historians, whiskey lovers, and whiskey historians,” Joe said. “I have applied everything I have learned in my life to this career because being self-employed can bring surprises. We knew coming into this we needed two things to make this work. First, you need a good product, and secondly and most importantly, you need a story, and we have that here in spades.”
“Our national history is a very personal one, at least it is for me,” Missy said. “Staley Mill Farm & Indian Creek Distillery tells the story of our country and of my family, one generation at a time. This beautifully preserved pioneer complex is a remarkably intact view into a vanishing landscape. My husband Joe and I share the past, the present and the future of our true heritage, timeless history and the spirit of liberty. We are preservationists by choice, pioneers by birth, dreamers of things to come and we are proud to produce America’s spirit… a true sip of history.”
Indian Creek Distillery is open year round at 7095 Staley Rd, New Carlisle, OH 45344. Hours are: Tuesday & Wednesday 12pm – 5pm, Thursday & Friday 12pm – 7pm, Saturday 12pm – 7pm (Tours available on Saturdays only at 12, 2, 4 and 6pm).
