Warped Wing Barrel Room & Smokery Celebrates First Anniversary

Warped Wing Barrel Room and Smokery, smoked meat and barrel aged beer; these are perhaps the two things I associate most with the season of fall. When I saw that The Warped Wing Barrel Room and Smokery was celebrating their 1 year anniversary this weekend, I couldn’t think of any better way to bring in the season.

For years now, ever since their grand opening, Warped Wing has been Dayton’s beer giant. Their dedication to quality control and branding has been tough for anybody in the state to compete with, let alone the Miami Valley. But something happened a couple years ago when they brought in a guy named Erin O’Neill; Warped Wing became a legitimate foodie destination.

The weather was perfect this weekend, calling for windows down so I smelled the Smokery from down the block, long before I pulled into the parking lot. Walking in the door has a nostalgic feeling to it. Art paying homage to their original location and barrel staves from their barrel aged program line the walls, but I had no time to gander, the smells had me salivating and ready to get straight to business.

I went to the bar and ordered just about every special anniversary offering they had. A flight of the new small batch smoked beers, a flight of tacos, some gumbo and a few sides. The traditional birria tacos were the star of the show. If you’ve never had a traditional birria taco before let me be the first to tell you, you are missing out. Think taco, meets grilled cheese, meets a French dip… but with slow cooked goat meat. These taco shells are first dipped in the au jus from the goat, then loaded with meat and cheese, then cooked on a flat top so that the cheese melts and the shell crisps up. The smell was intoxicating, the flavor was bold and as a result these G.O.A.T. Tacos live up to their name, the greatest of all time.

I did the hatch chile and fish taco as well and I would describe them as very authentic. The fish had the perfect amount of seasoning and char to compliment the sweetness of the mango papaya salsa. The hatch Chile pork had a great verde and hatch Chile combo going on, and I also associate hatch chiles with fall so that was a bonus for me.

Fall is also soup season as they say so I would be remiss if I did not order the gumbo. This is a recipe you can tell Erin has been working on for some time and honestly, it tastes like bourbon street at your feet until the break of dawn. Awesome job nailing this NOLA classic. Perfect brown coloring from a proper rue and you don’t get shorted on the ingredients. White fish, alligator, andouille sausage and shrimp all came together great in this well balanced dish.

You wanna know about the beer? Fine, I’ll tell you. Because I actually haven’t had an experience like this with their beer yet. Something really cool happened when Warped Wing opened up their new location and I think some people might have missed it. They got a small pilot system for interesting trial runs that they haven’t been able to do in the past. We are talking about a brewery that opened originally with nothing smaller than 30 barrel batches of beer (that’s about 10,000 cans) so traditionally they have had to stick to cores with occasional seasonals. Now, they can drop 5 new beers in one day and I’m all the way here for it.

The strawberry watermelon goes was as expected. Sweet, sour and salty. The sticklealt was true to the altbier style, clean and crisp. The Devil’s Candy smoked gose was really interesting. Cherry added a depth and sweetness that went really well with the smoke and the tangerine gave it a little citrus burst, then you still have that sour and salty taste so definitely a lot going on with this one. The s’mores stout was exactly like I left it last year and every year I remember before that, again I think these guys might have written the book on quality control.

The star of the show though for me was by far the Rauchtoberfest Boro Rauchbier. This beer actually gets its Smokey flavor by using malted barley dried over an open flame. In terms of complimenting the food Erin is busting out at this Smokery, I don’t think you could find or create a better beer. I considered getting a growler of it to take home, but ended up taking a couple bottles of one of their classics from the vault, the Grape Must, which I’ll be cracking on thanksgiving.

Five stars to the team at Warped Wing Barrel Room and Smokery. The beer, the food and the ambiance were all not only great, but incredibly unique as well. I’m excited to see what they come up with next.

3 Ghost Dinners Scheduled for Amber Rose

October will be creeping up before you know it, and part of the Miami Valley’s haunted past is the AMBER ROSE RESTAURANT!  Each fall Dayton’s ghost enthusiasts get an opportunity to experience a paranormal presentation, along with a 4 course dinner from Amber Rose on Valley Street in Old North Dayton.

The “ParaSense” Investigative Team will share stories, photos, recordings, and even some video they have captured during nights they have spent at Amber Rose.

The daughter of the original owner of the building is said to haunt the main level and upstairs of Amber Rose.  Her name is Genevieve Ksiezopolski, and is also known as “Chickie.”  One of the restaurant cooks claimed to have seen the ghostly spirit of Genevieve aka “Chickie” while cooking one night.   He says the full apparition was in front of him, in a ruffled dress.  She walked into,then out of the room.  Now comes the unexplainable part…. There are security cameras throughout the restaurant including the kitchen.  When the management heard the cook’s story, they decided to pull up the surveillance tape.  What they saw was a small, bright, white orb enter, circle and leave the room at the same exact time the cook said he saw the ghost.

 

This year the Amber Rose will host 3 night of dinners, each with a different menu.  Guests are asked to book their entire party together and they will be set up at one table for groups of four, six or eight.  In order to keep gets socially distanced, their will only be 10 tables set up each evening.  All guests must be 16 or over. This event is held on the 2nd floor banquet room, sorry but it is not handicapped accessible.  Here are the 3 options for 2021:

Foodtruck Spotlight: Slide Thru

The area’s newest foodtruck, Slide Thru, was launched just last month by Chef Kali Muhammad.  After he was laid off from his job at a catering company, due to the pandemic he  found himself cooking for family and friends as a way to support myself financially, and keep his skills sharpened. “The support that my family and friends provided gave me the inspiration I needed to pursue my dreams and invest in myself. I figured I would do a food truck so that I could pick my business up and take it wherever I needed to go in the instance of another shelter in place order, “shared Kali.
He tells us he “comes from a family of chefs and foodies. I’ve always had a passion for food but my desire to become a chef came from watching my grandfather cook as a child. My grandfather is Italian and his passion for the culinary arts is rooted deep in a culture of some of the worlds best cuisine. From fast food, to very successful catering companies, I’ve dedicated my life to exploring the world of food.”
His food truck, serves a modern twist on classic sandwiches in the form of sliders. His best selling slider is “Da’ Fresh Prince”. This slider is a Philly cheesesteak with fresh cut peppers and onions, topped with provolone cheese and served on a locally baked potato bun.
Oher signature sliders include The Flippin Birdy (chicken, candied turkey bacon, ranch), The Buff’ Chicken (chicken, Frank’s red hot sauce, Monterey Jack) and The Black Betty (southwest black bean patty, fresh pico de gallo, avocado ranch, crispy tortilla strips).
They also offer french fries which you can get loaded or with cajun or lemon pepper seasoning.

We asked him what he wants the Miami Valley to know about him and his food and here’s what he said;

“I want folks to know that true love and passion goes into the food we prepare for you. As a chef, I am dedicated to the process of preparing every ingredient. From brining the chicken we use in our sandwiches, to slow cooking and braising beef that was use in our speciality sliders. My staff has the same passion when prepping ingredients for our food. Their love, time, and focus goes into the process just as mine does. We aim to supply a simple, quickly served, delicious product that has been prepared with true culinary craft. Not only do I love my business and staff, but I love my customers. And I want to continue to bring people together through food as much as I can.”

CHL Virtual Halloween Cupcake Class

Cake, Hope and Love is offering a Virtual Halloween Cupcake Class! They will be decorating 6 different Halloween designs on a half dozen cupcakes. Owner Shannon Teague chose designs that should be easy and fun for most all ages. The designs will be a cat, pumpkin, owl, Frankenstein, Spider and bat cupcakes.

This class will be hosted in a private group page  on Facebook October 18th at 7pm. If you cannot be there for that exact time, that’s okay! The page group will be there for the remainder of the year and the video will stay there as well!

There are two ways to enjoy this virtual Halloween Cupcakes Class. One is to purchase a registration which includes an invite to the page. The invitation will be sent out the week prior to all those that register. With this single registration, you can have all of your friends come over and cupcake together with you! There will be only one invite, but you all can be together and having fun! The registration includes a list of supplies you will need to follow along for all 6 designs. You can register online with this link for just $20.

There will also be kits available. These kits will include everything you need to decorate the cupcakes and also the cupcakes themselves. You can order kits with the link below labeled Kit. Please note that the kit registration does NOT include the class registration. Kits will be available for pick up Saturday, October 16th from 11am-2pm only. Please note that we are closed Sundays & Mondays and I will not be around for pick ups during those times.

Bubbakoo’s Burritos Opens Thursday

Bubbakoo’s Burritos opened its first restaurant in Point Pleasant, New Jersey in 2008.  Their burrito concept serves up fresh, made-to-order food, that is affordable for kids, families and seniors. The company is quite community minded, offering fundraising opportunities, a Read it to Eat it Program that encourages students to read five books to earn a free meal.  They also offer catering with a build your own taco option, burrito trays and more.

Their first Ohio location is in Cincinnati and on Thursday at 11am they will open their first Miami Valley eatery at 5810 Wilmington Pike in Centerville.

You can create your own Burritos, bowl or quesadilla at this fast casual eatery, building from their menu with plenty of choices to keep it fresh every time!

There are also plenty of side to choose from and make sure and save some room for fried Oreos for dessert!

Bob Dylan’s Whiskey Hits Ohio Shelves!

The Heaven’s Door range of whiskey have been created by Bob Dylan (yes, actual Bob Dylan, the legendary songwriter) and Marc Bushala (founder of Angel’s Envy Bourbon), made in a church in Tennessee. This expression is made with a mash bill featuring 30% “small grains”, and the spirit is allowed to age for at least 8 years in American oak barrels. The bottle features a design from Dylan’s own wrought ironwork, and the name is of course a reference to his song ‘Knockin’ on Heaven’s Door’.

Heaven’s Door is a whole new canvas, with each bottle showcasing Dylan’s art. The brand is privileged to share the treasure trove of Bob Dylan’s artistic genius with works exclusive to the Heaven’s Door brand.

Ohio Liquor is releasing an exclusive, single barrel selection of Heaven’s Door. The product will begin hitting shelves on September 21st at a price of $52.39 plus tax and will be available until it has sold out.

These three barrels were selected by the distiller and OHLQ exclusively for Ohio, and are not available outside of our state. Single-barrel selections are not blended, and therefore retain the unique flavors, characteristics, and finish of the barrel in which they were aged. No two single-barrel selections are ever the same!

Ghostlight Coffee Celebrate’s Annual Lumberjack Fest!

Every year (except for that one year that we can all probably agree to forget about) since 2017, the team at Ghostlight Coffee sets aside a full day to celebrate the onset of fall with featured espresso drinks, bakery goods, local fare and more. The Lumberjack Festival has grown in size and popularity over the years, much like the legend of Lumberjack Joe himself, with the 2021 festival set to be the biggest to date. 
 
Ghostlight will host nine local vendors such as Joe’s Modern Garage, Reduce Reise Refillery, and Deeper Roots Coffee at it’s South Park location on Saturday, September 25 between 9am-2pm. Lumberjack-goers can enjoy featured drinks, including the signature Lumberjack Latte (a warm, sweet, slightly smoky concoction with maple, cinnamon and smoked sea salt), bakery items, games, giveaways and more.
Guests are encouraged, and may even be rewarded, for attending in their best tree-trimming garb (though we do ask that you leave your axes and oxes at home). Instead of a vendor or booth fee, Ghostlight Coffee is encouraging all  vendors to make a donation to The Rubi Girls. Additional details, such as a bakery menu and games, will be shared in the weeks leading up to the event.

We have Lionel Sternberger to thank for his invention of gastronomic genius. Lionel was 16 years old in 1926, flipping burgers inside his dad’s sandwich shop, the “Rite Spot,” in Pasadena, California.  Lionel, out of curiosity, added a piece of American cheese onto a hamburger frying on the griddle.

According to a 2019 report from Technomic, 70% of people would order American cheese on their cheeseburgers, compared to 59% who would order cheddar, 40% who would order Swiss and 39% who would order mozzarella. The default position for most cheese slices is squarely on top of the burger patty. At least, this was a widely held position until people on the internet lost their minds in 2017 when Google’s cheeseburger emoji featured cheese being placed below the patty, spurring a brief but intense internet debate as to the cheese’s rightful place in the burger hierarchy.

10?’s with Casa Núñez Chefs Susie and Iván

Susie and Iván Núñez have developed a comfortable blend of international culinary styles that has evolved into the distinctive Casa Núñez flavor. Iván learned the traditional cooking of his native Puerto Rico from his grandmother and his great-aunt. As a young man, he not only owned a successful Mexican restaurant called “Paso Real” in New Mexico, but also placed third in the prestigious Chilympiad in San Marcos, Texas. He later married Susie in Gibraltar and the pair made their first home together in Madrid, Spain.  Through his Air Force Attaché duty at the U.S. Embassy in Madrid, the couple began collecting authentic recipes from both Spanish and third-country acquaintances. They had regular reasons to invite a wide variety of guests to the Núñez home for meals and the Casa Núñez entertainment style was born.

 

What is your favorite ingredient to cook with?

Casa Núñez favorite ingredient is “Adobo” by Goya.  Adobo adds super flavor in a flash. Just sprinkle any of the different blends over meats, poultry, seafood and vegetables before cooking. You can also use it to punch up the taste of sauces and marinades.  Iván has a bottle in his car to use when we go out to different restaurants.

What ingredient do you dread?

Actually, nothing.  We have included ingredients from around the world and ensure the authentic recipes have the right flavors.

What’s your favorite dish to make?

The Casa Núñez Pavochón.

Roasting a turkey for Thanksgiving in the manner of lechón (suckling pig) has been a tradition in Puerto Rico since the island became an American commonwealth and adopted the holiday. The word Pavochón is a combination of the Spanish word for turkey, pavo, and the word for roasted pig, lechón.  On the Spanish speaking Caribbean islands, the meat of choice for any holiday is roasted suckling pig. It only makes sense to combine the tradition of the islands with an American tradition and serve turkey that is reminiscent of roasted pork for Thanksgiving. This flavor intensive recipe will go over well with the most discriminating of tastes!

Ingredients:

1 head of garlic (cloves separated, peeled, and minced) or garlic powder
1 tablespoon whole black pepper
1 tablespoon oregano
1 tablespoon parsley
1 tablespoon cilantro
1 packet Sazón Goya
3 tablespoons Adobo Goya
1 cup Mojo Goya
1 cup olive oil
2 tablespoons apple cider vinegar
1 14-pound turkey

Preparation:

Mash the first seven ingredients into a paste using a pilón (mortar and pestle). Stir in the Mojo, olive oil, and apple cider vinegar. Rub the mixture under the turkey’s skin, inside the cavities, and on top of the skin.

Stuff the turkey with Casa Núñez picadillo (recipe below).

Roast the turkey, covered with aluminum foil, and according to the manufacturer’s recommended time and temperature. After 2 hours, remove the foil and baste with the pan juices every 20-30 minutes. A 14 to 16-pound turkey will generally take about 3 to 4-1/2 hours to cook to an internal temperature of 160º.

 

Casa Núñez Ground Beef – Picadillo

1-1/2 pounds ground beef
1 large onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 15-ounce can of chopped tomatoes, drained
2 teaspoons ground cumin
¼ teaspoon ground coriander
Adobo to taste
1 packet Sazón
1 teaspoon capers
2 tablespoons olive oil
½ cup quartered and pitted green olives

Preparation:

In a large stainless-steel frying pan, cook the ground beef until it is no longer pink. Remove all the fat; add the onion, bell pepper, and garlic. Cook, stirring occasionally, until the vegetables start to soften, about 3 minutes.

Stir in the tomatoes, cumin, coriander, Adobo, Sazón, capers, olives, and bring to a boil. Reduce the heat and simmer, covered, for 30 minutes.

Allow to cool before using as stuffing.

Ingredients to marinate the pork:

1 cup Mojo
½ cup olive oil
1 teaspoon Adobo
1 packet Sazón
1 teaspoon dried oregano
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon garlic powder
3-4-pound pork loin, trimmed and cleaned

Sandwich:

Dinner rolls (1-2 per person being served), pork, Swiss cheese, sliced ham, mayonnaise, yellow mustard, and hamburger dill pickle chips

Preparation:
Mix ingredients for marinade together and coat the pork loin with it; let it sit for at least an hour, but preferably overnight.  Roast in 425º oven for approximately 2 hours or until a meat thermometer registers 160º at the center. Remove from oven and let rest 10 minutes before slicing thinly.  Slice dinner rolls in half lengthwise for sandwiches and spread each half with mayonnaise and mustard, respectively. Cover one side with pork and a slice of Swiss cheese (you may have to trim it so that there is not too much overlap), and the other with a slice of ham. Add dill pickles to taste and enough pieces of pork to cover the other ingredients.  If you have a panini press, follow the directions to press down the sandwiches. If not, heat some butter or margarine in a frying or grill pan and, when hot, place the sandwiches on it close together. Using another frying pan of smaller diameter, as weight, or a spatula, press the sandwiches down as they cook (they should compress to about half of their original height). When the bottom side is lightly browned, flip the sandwiches over and repeat on the second side.

The world is filled with exciting traditional food; never stop trying new recipes that introduce you to different cultures.

If you could invite any 4 guests to a dinner party who would they be and why?

Casa Núñez will invite our friends Jose Andres (Jaleo in DC), Jose Maria (Segovia, Spain), Jesus (El Mesón del Cid, Madrid, Spain), and Vaso (Alexandra, VA).  Outstanding chefs of international cuisine!

Who do you look up to in the industry and why?

We would like to recognize the chefs and assisting staff at the Dorothy Lane Market Culinary Center.  We were invited to conduct cooking classes there about four years ago and we have had the best experiences learning and working with them.

What do you do in the Miami Valley on a day off?

Even though we have a business cooking, we are definitely foodies and like to try out new recipes. Lazy weekends are perfect for antique shopping or movie marathons.  There is always music playing at Casa Núñez, whether it’s recorded or Iván has picked up his guitar to sing. He also paints and draws. Susie is an old-school correspondent who still writes letters to friends for the regular mail and has an average word length of 22 in “Words With Friends”.

Share a kitchen disaster, lucky break or other interesting story:

Casa Núñez had a wonderful time participating in the Ronald McDonald House Charities fundraiser “Doors Of Compassion”; a real challenge and rewarding first time for us in 2019. Each featured chef was provided with a “basket” of ingredients to make a meal at a hosts’ home. We thought that we had to include each of the ingredients. However, we later found out that different chefs created their own menus, regardless of what was provided. This was after we had prepared a Spanish Tapas meal of 11 different dishes based on what we had been given.

Oct 8 – Oktoberfest Celebration
The world’s largest festival, traditionally is held in late September and early October (it runs 16 days!) in Munich, Germany. Our German-style celebration is a bit smaller but just as much fun. Join Iván and Susie for this festive celebration of German food, beer, and wine. Bratwurst Sausages with Pretzels and Sauerkraut, German Potato Salad, Oktoberfest Roast, White Asparagus, and German Chocolate Cupcakes.

Dec 10th- Barrel House Cooking

Bourbons, with their wonderfully rich flavor profiles, make them a culinary gem. Just like cooking with wine, Bourbon offers an incredible depth of flavor. With caramel undertones, smokey, and sometimes wheaty notes, Bourbon adds great flavor to both savory and dessert dishes. We’re all familiar with Bourbon balls, and how Bourbon elevates eggnog to greatness, but Iván and Susie will explore a wider range of culinary uses. They’ll explain the nuances of this special barrel-aged libation, such as the importance of only using one you enjoy sipping, and how different styles of Bourbon affect dishes differently. Cajun Sausage Puffs with Bourbon Mustard; Spinach Salad with Bacon, Blue Cheese, and Bourbon Vinaigrette; Bourbon-Glazed Salmon; Bourbon Sweet Potatoes; and Maple-Bourbon Banana Cake. This menu will be served with wine.
