Celebrating Mardi Gras Around The Miami Valley

Fat Tuesday is the traditional name for the day before Ash Wednesday, the first day of Lent in  the Roman Catholic Church and Protestant churches. Fat Tuesday is more commonly known as Mardi Gras, which is simply Fat Tuesday in French. It’s called Fat Tuesday because it’s the last day that many people eat meat and fatty foods before Lent begins.

Thai Kitchen Opens Across From Dayton Mall

Thai Kitchen opened in their new location today, just a few miles away on the other side of the mall from their original Kingsridge Drive spot.

The first thing you notice is the large opening dining room, with a sushi bar and open window into the kitchen.

I ordered off the lunch menu, which is offered until 3pm. Sushi boat and combo boxes are offered, all which come with miso soup.

Started with miso soup, and an order of Shu-Mai, steamed shrimp dumplings.

 

 

 

 

 

 

 

All boxes come with 4 pieces of a California roll, spring roll and jasmine rice and then I chose chicken pad thai and three flavor shrimp.

Looking forward to warmer days so I can enjoy patio dining on the huge patio!

AWear Affair is held each year, on the last Saturday in February. Mike-Sells To Close

The rumors are true. Mikesell’s is closing down it’s operations. A spokesperson has said they are “wind-down its manufacturing, distribution, and administrative operations to proceed with an orderly liquidation of its assets.” The liquidation of its assets will begin immediately and continue over the next several months.

“Although the terms have not yet been finalized, we understand the desire to keep products available, and are working to facilitate the necessary conversations for approvals that will allow for an uninterrupted supply of Mikesell’s products,” that same spokesperson said.

“To continue to protect the Mikesell’s brand, so it can remain viable in the market and continue to move forward, Mikesell’s is announcing that it intends to transition all Mikesell’s brand and IP rights to another quality snack food manufacturer, as soon as possible,” a spokesperson for the company said in a statement.

“The Mikesell’s family and team wish to thank the community, consumers and partners for their love and support over the past 112+ years,” shares Luke Mapp, President of Mikesell’s. “Our family will long remember the fan love, the friendships and the wins along the way the most.”

Mikesell’s History:

D.W. Mikesell and his wife operated a business selling dried beef and sausages from two rooms on South Williams Street in Dayton, Ohio. Then came the opportunity to buy some potato chip equipment and the Mikesell’s Potato Chip Company was born.

 

1925

The Mikesell Company saw a need for a unique logo. It was decided that a “play on words” using the Mikesell name should be used. A hyphen was added making the trademarked Mike-sell’s name. The hyphen remained for over 85 years.


1955

D.W. Mikesell and Guy Lombardo are pictured here tasting a chip right off the conveyer belt. Lombardo exclaimed that the chips were “Music to his Mouth.” In the 1950s, the chips were put into cellophane and glassine bags before they lost any of their crisp flavor. Today, the materials have changed, but the freshness and quality remains the same.


1965

Daniel W. Mikesell passes away at the age of 82.


1987

1987 was an historic year for Mikesell’s fans across the country. With the introduction of the Chipper Shipper program, fans from all over could order direct and have them shipped to their door.


2010

Celebration of Mikesell’s 100th Birthday! Stay tuned for more great milestones in our next 100 years.

MELT closes Beavercreek and Canton Locations

The Cleveland-based Melt Bar and Grilled chain, which opened it’s first restaurant in Lakewood in 2006 today closed two of their stores.

The Beavercreek store, which was between Fusian and JC Penney opened in June of 2017 and had 5000 square foot space that sat about 150 with another 40 or so on the patio. Melt specialized in specialty grilled-cheese sandwiches with many added ingredients — the founder called it “cool comfort food” — as well as craft beers, specialty cocktails, and an eclectic atmosphere. They offered  those who get a tattoo that featured a Melt logo got 25 percent off for life.

Cory Green, who served at the Assistant Kitchen Manager until today, shared in the Dayton Foodies group, “we put a lot of pride into what the kitchen was making up until the end.”

Also closed today, Melt’s 11th location in Canton at Belden Village Mall.

 Melt Bar and Grilled’s restaurant in Columbus’s Short North district  closed after nine years this past June.  “It’s been 9 great years in The Short North,” owner Matt Fish said in a news release. “However, with very difficult staffing challenges, major cost increases, and other new issues to navigate in the post-pandemic world, we have made the difficult decision to permanently close the Melt Short North location.”

Little Fish Chef Nominated for James Beard Award

The James Beard Awards, considered to be among the nation’s most prestigious honors, recognize exceptional talent in the culinary and food media industries, as well as a demonstrated commitment to racial and gender equity, community, sustainability, and a culture where all can thrive.

Chef Becky Clark of Little Fish Brewing Company was nominated as a semi finalist in the Best Chef: Great Lakes (IL, IN, MI, OH) category.  In talking with Becky last night, she shared she “was still a little shell shocked from the news.”  She found out when a wine rep congratulated one of her co-workers, and that co-worked called her and asked if she knew.  She didn’t until that call.  Clark said she’s followed the James Beard Awards for years, always trying to dine at restaurants nominated, but had no idea how she got nominated this year.  She knows it wasn’t anyone she works with, and hopes to find out who nominated her soon.

Finalists will be announced on Wednesday, March 29, and winners will be celebrated at the James Beard Restaurant and Chef Awards Ceremony on Monday, June 5, 2023, at the Lyric Opera of Chicago.

Becky has been the Executive Chef at the Athens brewery for over four years.  When they announced the Dayton location she was excited to oversee this kitchen as well.  She explains that her menu philosophy is driven by local agriculture and seasonal availability. She went on to say she’s been incredibly impressed with the local vendors and farmers and about how wonderful they are to work with.  She was recently checking on the availability of local radishes and was thrilled to find out she had a dozen options to choose from.  She’s been getting bread from Good Hands Bread Company, Ghostlight is doing her burger buns and she can’t wait to create more collaborations with our local farms.

One of the newer dishes to hit the menu is spanakopita. This plate features flaky phyllo dough, filled with spinach and feta cheese, all set on top of preserved lemon hummus, olives, dill yogurt, and spiced harissa carrots.

Risotto is a staple on the menu, though the version seems to change frequently.  Currently their is a cod rissoto and this special saffron rissoto made a guest appearance last week.

 

Want to try her food?  There are still a few tickets left for the Tuesday, Jan 31st 5 course Beer Paring Dinner.  Not lucky enough to score a ticket, you can still dine at Little Fish for lunch or dinner Wednesday – Sunday. It’s an elevated enough spot for a great date night dinner, yet casual enough you can stop by for a beer while out for a run.

Little Fish is a family friendly place. Chef Becky shares that The little Minnows menu that just rolled out follows her fresh food beliefs, featuring house-made cod fish sticks, hummus and veggies for dipping and a hand patty beef or veggie burger.

Catch happy hours Wednesday through Friday with special happy hour food and drink menu from 3-6pm. There are $5 dollar beers, cocktails, and small plates!

BBQ is Back on Byers Road

Founder Al Shamburger is back in business!  Having closed his Huber Heights BBQ shop in 2020, he’s found a new home on Byers Road, in the space formerly know as Byers Inn, Dark Horse Tavern, Oinkadoodle Moo and most recently Steve & Tammy’s Tavern.   Big A’s BBQ & Grill is now in their “quiet opening phase,” according to big Al.

They’ll be open daily this week from 3-10pm and then next week they’ll add lunch service from 11am – 10pm, including their all you can eat catfish special on Friday.

Live music will start in March as well as dart leagues and trivia night.

Rajun Cajun Grill Now Open in Miamsburg

The Vaughn family has been making cajun for generations.  The family hails from New Orleans and the recipes came from Great Grandmother Vaughn.  They operated a food truck starting in 2017 at St Rt 225 & Rt. 4 at the Marathon Station and  did the fair and festival circuit.

Earlier this month they opened up on a storefront on Main Street in Miamisburg, in the space once occupied by Ms. Pickles, near the Plaza Theater. They’ll be open 11am -9pm every day of the week.  The dining room is small, just 6 tables of two, but on my visit there were quite a few carry out orders being picked up.

And while the dining room is small, the food delivered big flavor!  Sons David, Jr and Nathan were working the open kitchen, while New Orleans jazz filled the air.  I ordered the Big Easy Sampler, which included bourbon chicken, sausage, rice and beans and jambalaya, with a side of macaroni and cheese and cornbread. It was huge with a spicy kick. The cornbread, while not made on sight, was fluffy and moist.

10? with Chef Franco Gallo

Chef Franco Gallo grew up in a small town in Italy by the Adriatic Sea in Brindisi, where he got his first taste of the restaurant business doing every job imaginable alongside many Italian Chefs in his hometown. He also served in the Italian Army and was trained in culinary art to serve the high ranking officer staff. He met his wife in the Navy, stationed in Italy where they met and he followed here here. His most recent experience was being the Head Chef at the Dayton Bicycle Club for 15 years. Last summer the stars aligned with the opportunity to open Franco the Foodie, where he is the now the owner and Chef, creating a unique rotating menu every week and catering for parties and events.  His family is all involved in the business with his wife and one daughter works in the kitchen, while his other daughter works the front of the house.

What is your favorite ingredient to cook with?

Garlic is one of my favorite ingredients. It is simple, flavorful and fragrant, adding a lot too many dishes. After all, I am 100 percent Italian, born and raised in Italy. They put garlic in our pacifiers.

What ingredient do you dread?

I don’t dread any ingredient in particular, although I am not a fan of peeling beets, although I do love to eat them.

What’s your favorite dish to make?

My favorite dish to make is homemade pasta. To me there is nothing better than making homemade pasta. I find it therapeutic and the end result is pure delicious in a variety of sauces and options. It also takes me back to my childhood when I first was introduced to making pasta with my mother and grandmother in Italy.

What’s your favorite pig out food?

Fried calamari and shrimp, with squeeze of lemon on top and fresh parsley. I could eat that all day long. Growing up by the Adriatic Sea in Italy it was a common street food that always brings me back home.

What restaurant, other than your own, do you like to dine at in the Miami Valley?

Lily’s Bistro and Meadowlark are 2 of my favorite restaurants. I like how they utilize seasonal fresh ingredients, and the dishes are often creative and enjoyable.

What’s your best advice for home chefs?

Simplicity goes a long way. Don’t overdo it and think that adding too many ingredients makes things better. Less is often more when it comes to cooking. And YouTube can often be your best friend when learning how to use new ingredients or trying a new recipe.

If you could invite any 4 guests to a dinner party who would they be and why?

My mother, who lives in Italy and I don’t get to see her very often. My father, who passed away several years ago. My grandmother, who taught me a lot about cooking. And my wife, who tells me she is my biggest fan, so I better include her so she doesn’t divorce me.

Who do you look up to in the industry and why?

My brother Tony, who is a Chef in Italy. He has a reputation for making some amazing food and pizza dough in Brindisi, where we grew up. He recently came to visit and spent time working with me and showing me some tips and cooking techniques. One thing that I learned a long time ago is that a Chef never stops learning and I appreciated him sharing his knowledge with me.

What do you do in the Miami Valley on a day off?

I don’t have many days off, but when I get a chance to relax I like to watch a movie, or play online nerdy games, such as World of Warcraft.

Share a kitchen disaster, lucky break or other interesting story:

Approximately 6 months ago I had the opportunity to open Franco the Foodie. It has been a dream of mine for many years to have my own restaurant. You could call this my lucky break, as everything aligned at the right place at the right time. I have greatly enjoyed the challenge and look forward to growing the business, also recognizing it is not always easy. But it is extremely satisfying getting to know the local customers and welcoming them like family.

Girl Scout Cookie Season Is Here!

Each girl scout cookie season I share this story:


I admit I was a girl scout. And for those of you who know me, it will come as no surprise that I was determined to sell more cookies than any of the other girls. I went up and down my street, knocking on doors for orders. I called all my relatives and perfected my telemarketing skills. I asked my dad to get his co-workers to buy from me. And he said NO! But he did offer to take me to work so I could ask for the order. I worked hard and sold hundreds of boxes and was sure I’d win the Cookie title.

Well as it turns out, I didn’t. Some little girl named Susie did. She lived down the street from me and I never saw her ask any of our neighbors to buy cookies. I asked her how she did it and she said it was easy-her mom and dad got all the orders for her. I was mad and didn’t think it was fair and complained to my dad about it. He told me life wasn’t fair, never would be, but that I’d really won, and I’d appreciate it some day when I realized that I had gotten much more out of it than Susie had. Not what a 9 year old girl wants to hear. So I’m sure I sulked around for a while, until something else captured my attention.

But now many years later, I get it. My dad was right- I had won! I’d learned how to set a goal, prospect customers, perfect my sales pitch, work on my organizational skills, plan the logistics of delivery, handle money, make change and enjoy quite a few cookies, too!

And that’s why I implore you to only buy cookies from Girl Scouts. I know there are many well intentioned parents that want to help their daughters, and help support the troops so they can put on all the programs they have scheduled; but please help them by letting them sell! And I still pledge to buy cookies from any girl scout who asks.  

When you buy Girl Scout Cookies from the girls  you help young entrepreneurs develop five essential life skills.

Skill #1: Goal Setting
Girl Scouts learn how to set goals and create a plan to reach them, enabling amazing experiences for themselves and their troops all year long, while helping others too.

Skill #2: Decision Making
Girl Scouts learn to make decisions on their own and as a team, whether it’s how to run and promote their cookie sale, interact with customers, or spend their earnings.

Skill #3: Money Management
Girl Scouts learn to expand their money smarts while running their own cookie business and create a budget to fund the experiences they want to share as a troop.

Skill #4: People Skills
Girl Scouts find their voice and build confidence through customer interactions, developing valuable skills that will help them succeed in school, in business, and in life.

Skill #5: Business Ethics
Girl Scouts learn to act ethically—lessons that will stay with them for a lifetime of leadership and success.

New this year: Raspberry Rally is described as a thin, crispy cookie infused with a raspberry flavor and dipped in the same chocolaty coating as Thin Mints. This cookie is the first Girl Scout Cookie to be exclusively offered for online sale and direct shipment only. These are available starting Feb 28th.
