Adoration Winter Ale debuts at Chappy’s

Not far from the birthplace of baseball, in Copperstown NY,  is one of our countries most unique microbrewery’s. Set on a former hop farm in upstate New York, Brewery Ommegang was born with the philosophy that truly unique ales must be built from the ground up. Brewery Ommegang is the place where brewing is an art and partaking is a passion.

And just in time for some holiday swilling, Ommegang Adoration, brewed in the authentic style of Belgian winter, or noel beer, is dark, strong, malty and assertively spiced, will make it’s debut at Chappy’s Tap Room & Grill.

At 10% abv Adoration is not a lightweight beer, and is best sipped before a roaring fire, or on a sleigh ride over the hills to Grandma’s house. (But let someone else drive.)  Even at the strong abv, the beer is well-balanced and not at all hot or fiery. The dark malts give it lush, malty flavors and aromas, strongly complemented by the five spices, including coriander, cumin, mace, cardamom and grains of paradise. Hopping is modest, as befits such a beer.

According to the brewery’s Larry Bennett, “The idea was to do a traditional, Belgian-style winter/Noel/Christmas beer in the US. Few breweries here attempt to make one in the traditional Belgian style.  It’s malty, spicy and dry. It’s 10% abv but has no obvious alcohol burn.”

Tis The Season To Dine with Santa

If your children cannot stop talking about Santa Claus, you are not alone.  That’s why restaurants all over town have put together some special opportunities  to allow your kids to meet one of Santa’s helpers.

But here’s a tip for you.  Don’t spring Santa on them. Let your child know they are going to meet a very special visitor. Ask them what they think Santa will wear and talk about how he has a big beard.  Sometimes children will feel more secure of they have siblings or friends accompanying them, however you are the best gauge of your child’s needs.  And be sure and have fresh batteries in the camera!

10 ?’s with Chef Carrie Walters

Carrie Walters is the Corporate Chef for Dorothy Lane Market and is responsible for researching and developing new recipes, menus, and programs. She plays a key role in the  annual Food and Wine Show (which always sells out)  and other special events for DLM. As a food stylist, she has designed in-house food shots for the DLM website, and electronic and print publications, in addition to television commercials and other multimedia venues.  Here she shares some tips to make your holiday cooking easier:

Carrie is an accomplished chef who has been the keynote speaker for many groups, ranging from ten to over 300 people. One of the most  popular instructors at the DLM School of Cooking, Carrie teaches a variety of classes, always with her approachable demeanor, contagious enthusiasm, and interactive teaching style. A classically trained chef, Carrie earned her culinary degree in Seattle.

What is your favorite ingredient to cook with?

I would have to say beef. At DLM we have the best beef in the business. All it needs  is some simple cooking methods and some salt and pepper.

What ingredient do you dread?

Red and Green Bell Peppers. I think they are over used! Yes, their color adds a lot to a dish but their flavor tends to overpower everything else.

What’s your favorite dish to make?

At home with the change of season I like to braise a lot. I make a lot of pot roasts, soups and  anything else with sauce! Another dish I keep coming back to is roast chicken, It makes everyone in my house happy and the leftovers are great!

What’s your favorite pig out food?

Thai and Vietnamese-I love all the fresh clean flavors. I like the combinations of fresh herbs, citrus and chiles. I think I could eat shredded papaya salad everyday and never get sick of it.

What restaurant, other than your own do you like to dine at in the Miami Valley?

I love Linh’s, Akashi, and House of Thai for my Asian fix. I’ll take Meadowlark for lunch any day of the week!

What’s your best advice for home chefs?

Cooking really supposed to be fun and relaxing. Don’t over think or stress about it.  Its all about getting to sit down with people you love and share some food. Make it simple.

If you could invite any 4 guests to a dinner party who would they be and why?

I’d cook for my parents who never got the chance to know me as a grown woman and 2 of my favorites Chef Instructors from my culinary school days. I’d cook some of my Mom’s old favorites with my own twists. All executed, of course,  with the classic skills Chef Hawley and Chef Ruegg taught me.

Who do you look up to in the industry and why?

I really respect both Norman and Calvin Mayne. They let me do what I am good at!  I love being able to wear lots of hats-creating recipes and programs, writing and teaching. DLM is a company that I am proud to represent .

What do you do in the Miami Valley on a day off?

A perfect day would be to take an early hike at either the Gorge or Sugarcreek Reserve  with my family , then maybe do a little shopping at the Greene and then see a movie or a play. Unfortunately the reality of my time off is trying to catching up with all the laundry and running my kids around!

Share a kitchen disaster, lucky break or other interesting story:

We were filming a TV show with Sara Moulton at the School of Cooking  a couple of years ago and one of the dishes were supposed to be a specific type of chicken There was a live audience watching my every move waiting for Sara to show up. Our chickens never made the air flight to Dayton so last minute I had to use solid frozen Cornish hens for the camera. I had to “paint” on some color for the birds to look cooked. I used a concoction of kitchen bouquet, molasses and soy sauce. Even after all that we still had a couple audience members wanting to taste those birds!

Finding Wines to Pair With Your Turkey

Thanksgiving- it’s a time to celebrate with friends and family, yet at this time of year you often hear people asking what wine pairs well with Turkey? If you’ve been asked to bring the wine or have people coming to your house for holiday dinner, no need to stress about what to serve. The good news is there is no correct answer. Turkey pairs well with red wine or white wine depending on what you and your guests like. Turkey is adaptable and the way it’s prepared as well as other dishes to the meal really dictate what wine to pair it with.

If you are a red wine drinker, try a Pinot Noir. It’s a nice flavored red wine that will pair well with turkey. Pinot Noir has very little tannins which means it won’t overwhelm the meal. Putting the Pinot Noir in the refrigerator for about 20 minutes before serving it will bring out the fruit and will take away the ‘bite’ that alcohol can give when served at room temperature.

If you like white wines, try a Chardonnay or even a Pinot Gris.  Almost any good white will work, but stay away from the sweet dessert style whites. Light and crisp Chardonnay’s  along with most Sauvignon Blanc’s will work.  Sparkling Wine also works  and brings a festive note to the meal. There are some powerful, yet affordable brut Champagnes that have sufficient weight and structure to stand up to a rich meal. Again, stay away from the sweeter Champagnes.

French Bistro Introduces New Specials

Chef Dominique Fortin has introduced a new version of his daily specials and invites you to visit C’est Tout for a two course meal at a great price.  Here are the weekly features:

MON :  Chicken Pot Pie $12.95
TUES:  Spaghetti and Meatballs with Garlic Bread $10.95
WED:  Pork Chop, Sweet Potato Casserole and Vegetables – $12.75
THURS:  Homemade Meatloaf with Pomme Puree and Vegetables – Red Wine Sauce $10.95
FRI:  Fish ‘n’ Chips- Tartare Sauce  $14.50
SAT:  Roasted Prime Rib ” au jus” small $15.95 queen $19.75 king $26.50

Foursquare Equals Freebies at Chain Restaurant

Fans of the smartphone application Foursquare can now earn free food at McCormick & Schmick’s when they check in during happy hour. You’ll have your choice of beer battered mushrooms, black bean hummus, fried zucchini or salmon cakes, as long as you check in and purchase a drink – alcoholic or not.Happy hour runs from 3-6pm and all day Sunday in the bar area.  And don’t forget every Tuesday night you can enjoy $1 oysters as well.

Chef Ming Tsai Back in Dayton

Ming Tsai grew up in Dayton, cooking with his parents and grandparents in the family restaurant, Mandarin Kitchen.  Then he went off to Yale, studied to become a mechanical engineer.  But after a trip to Paris, he realized that food was going to be his career.  He enrolled at the Cordon Bleu and worked to integrate his passion for French Cuisine with his Chinese cooking roots.  Now years later he’s established himself as a master of East meets West dishes, as featured on his own Food Network show.  He’s gone on to become a successful author as well, and his fourth book is the motivation for this trip to Dayton.  His first cookbook , Blue Ginger, is names after his Weley, MA restaurant, opened in 1998 with his wife Polly.  Since then, Simply Ming, and Ming’s Master Recipes were released.

Tsai recently guest starred on an episode of Top Chef , opened Blue Ginger Noodle Bar, a mini-restaurant, inside Blue Ginger and  is currently competing for the “Next Iron Chef” on the Food Network Channel.  Ming will be in town on Thurs, Nov 4th at ThinkTV for a book signing and meet & greet for his latest book: SIMPLY MING ONE-POT MEALS. Tickets  are $32 per person or per couple and include wine, beverages, light hors d’oeuvres and a signed copy of the new cookbook. RSVP deadline is Tuesday, Nov. 2. No Soup For You! Ok- Soup For You!

Remember “the Soup Nazi” on Seinfeld? Larry Thomas who gained fame as a recurring Seinfeld character  will host a “Soup Off” in Dayton on Friday, October 29th from 5:30 – 8:30pm at the Doubletree Guest Suites, across from the Dayton Mall. All proceeds from this event will be used to benefit the work of A Doctor’s Heart, Inc.

Area restaurants like Brio Tuscan Grill, C’est Tout a Bistro, Chef Rahn – Artizan Bread, Jay’s Seafood, DoubleTree, Bullwinkle’s Top Hat Bistro, Amber Rose Catering and Restaurant,  L’Auberge and Christopher’s Restaurant and Catering are among the local eateries that will be providing soups.  The Doubletree Hotel in Miamisburg is donating the complete use of their banquet facilities, kitchen, and serving personnel.

Your $12 donation will not only get you to a great evening of fun and a complete soup dinner. More importantly it will allow A Doctor’s Heart to fund fish farms, clean water wells and missionary housing in remote areas of the Amazon River basin. The goal is to have 400-600 people attend and join in helping improve the lives and health of these deserving people. Remember, this is a fund-raiser. Feel free to donate much more than $12!!

“Soup Off” attendees will be treated to screams of “No Soup For You!” as the Soup Nazi bangs his ladle and serves as judge and jury for best soup in a “Soup Off”. Who better to judge a fabulous selection of soups contributed by area restaurants and friends than the Soup Nazi! As an added treat, autographed ladles and pictures with Larry will be available for a modest additional donation.

Cash Bar, door prizes, a variety of soups and lots of laughs will be available from 5:30 – 8:30 in the Main Lobby, Lobby Bar, Patio and Ohio Room at the Doubletree in Miamisburg. Please park next door at Cub Foods, and enter through the Doubletree’s Main Entrance. Enjoy the entertainment and a complete soup dinner for a $12 donation. Stone Brewing Company Beers featured in Spinoza Dinner

This West Coast Brewer is known for it’s big aggressive beer flavors, probably the most popular being Arrogant Bastard Ale.  Spinoza’s will pair a food course with 6 of their big beer flavors on Tues, Oct 26th in what have become monthly beer dinners at this Beavercreek pizzeria, located at The Mall at Fairfield Commons near Sears. Advance reservations are required and can be made be calling Spinoza’s at 426-7799  for a very reasonable $26.95 per guest plus tax & gratuity.  The menu is as follows:

WELCOME

Stone Levitation Ale Style: American Amber Ale ABV: 4.4%

This deep amber ale has rich & roasty malt flavors, a big hoppy character, citrus overtones (courtesy of the hops and special brewers yeast) and modest alcohol.

Paired with Bruschette with Herbed Ricotta Cheese and Stone Pale Ale Pearls

APPETIZER

Stone IPA Style: American IPA ABV: 6.9%

Look up ‘hops’ in the dictionary and you’ll see a picture of Stone IPA! ‘Dry-hopped’ for an extra two weeks, this unique process gives this India Pale Ale its bountiful hop aroma and rich hop flavor. A full 70+ IBUs (International Bitterness Units) creates this beer’s crisp and refreshing bitter character.

Paired with Roasted Garlic IPA Soup

Stone Vertical Epic 10-10-10 (draft)            Style:Belgian Strong Pale Ale |  9.50% ABV

‘Fermented with the legendary Ardennes strain of Belgian yeast, 10.10.10 is a Belgian Strong Pale Ale brewed with pale malt and triticale (a cross of wheat and rye), hopped with German Perle hops, and steeped with chamomile during the whirlpool stage. In secondary fermentation, we added a juice blend of Muscat, Gewurztraminer, and Sauvignon Blanc grape varieties.

Paired with Organic Petite Spring Mix with Hibiscus Leaf, Baked Goat Cheese, Hard Boiled Quail Egg, and Saison du Buff Vinaigrette

INTERMEZZO TASTE

Stone Smoked Porter Style: American Porter ABV: 5.9%

A rich, dark and delicious porter with chocolate and coffee overtones accented by a subtle smokiness from just the right amount of peat smoked malt. The ‘smoke’ in Stone Smoked Porter is an ELEMENT of the character rather than being THE character.

Served with Danish Havarti Cheese

ENTRÉE

Oaked Arrogant Bastard Style: American Strong Ale ABV: 7.2%

This is an aggressive beer. According to Stone Brewing, you probably won’t like it. But we know that you, as an adventurous Spinoza’s Beer Dinner guest, have the taste and sophistication to appreciate an ale of this quality and depth.  Oak chips are introduced to this version for an added dimension.

Paired with Deep Dish Pizza of Sweet Italian Sausage, Sautéed Midwest Chanterelles, San Marzano Tomatoes, Asiago, Mozzarella, and Provolone Cheese with an Arrogant Fennel Pizza Sauce

DESSERT

Sublimely Self-Righteous Ale (draft) Style: Cascadian Dark Ale ABV: 9.1%

When you do something great, the least you can do is acknowledge it. In this case, Stone was compelled to point out how amazing this beer is by justifiably calling it “Sublimely Self Righteous Ale”. First brewed in 2007 as Stone’s 11th Anniversary Ale, this beer was an instant hit.

Paired with Pumpkin Brulee with Self-Righteous Whipped Cream and Cinnamon-Nutmeg Pepitas

All You Can Eat Chocolate Party

Betty Blose, owner of Bellbrook Chocolate Shoppe, and her staff will host their 11th annual All You Can Eat Chocolate Party this Sunday, Oct 24th from 4-6pm.  The workroom counters will be filled with caramels, turtles, chocolate covered nuts and chews, shortbread cookies, peppermint bark, chocolate peanut brittle and more.  There is nothing fancy about this event, it’s just hundreds of pounds of chocolate there for the tasting!  Your $15 admission includes  a bottled water, which you’ll need to wash down the chocolate treats.

All funds raised during the event will go to provide mammography services to underserved/underinsured Dayton area women/men. Tickets are available at the Shoppe which is located in the Cross Point Centre at 101 E. Alex-Bell Rd. Suite 144  Centerville OH 45459. 937-436-5066
