Beavercreek Brewery Sets Opening Date

November 21, 2016 By Dayton Most Metro

15027813_641325592715980_4752995782437629383_nWandering Griffin Brewery & Pub, the first independently owned microbrewery restaurant in Beavercreek, announced it will have a soft opening on Wednesday, November 23 starting at 6 am followed by its grand opening on Friday, December 2 at 6 am. During the grand opening, there will be a ribbon-cutting ceremony at noon. The Mayor of Beavercreek will be in attendance.

Wandering Griffin, managed by principle owners Brian Young and Tony Griffin in conjunction with a number of investors, offers patrons a unique dining experience with its 1930s art deco dining room and bar, 1860s reclaimed wood taproom and coffee bar. It has extensive lunch and dinner menus and full bar service.

wgkitchen
Chefs Kenneth Mangus and Jason Breitenstien, formerly of Coco’s Bistro and Winds Café respectively, head up the kitchen and have created lunch and dinner menus that feature locally-sourced and housemade appetizers, soups, salads, sandwiches and entrées, including tater tots, beef on weck, pork belly grilled cheese, gourmet pizza and pan seared salmon. The bar includes handcrafted beers, an array of wine and signature cocktails. The brewery and pub also offers a large partially covered patio with a bar and outdoor televisions.

wg3The full-service coffee bar, aptly named Wanderlust, is located in the heart of the brewery and pub. The coffee bar is open daily 6:30 am – 3 pm and will offer drive-through service from 6 am – 10 am on weekdays and 7 am – 10 am on weekends.

Wandering Griffin isn’t offering its own craft beer yet, but expects to start brewing mid to late 2017. Brian Young states that, “This is a very exciting time for the beer scene in the greater Dayton region, and we are happy to be a part of it. Our aim is to provide a variety of locally-brewed craft beers and guest taps until we’re brewing our own. When we do brew our own, we plan to offer a variety of styles, including lagers.”

Wandering Griffin is located at 3725 Presidential Drive, Beavercreek, Ohio 45324. It’s open 11 am – 11 pm Monday – Thursday, 11 am – midnight Friday and Saturday and 11 am – 10 pm Sunday. Wanderlust coffee bar service begins daily at 6:30 am. Food service begins daily at 11 am.

Warped Wing Brewing Co. is a craft brewery inspired by Dayton’s rich history of innovation and invention. They are committed to carrying that spirit forward in today’s craft beer scene by brewing new proprietary beer styles and our own “warped” interpretations. They also focus on creating unique seasonal and specialty beers.

They have a full-scale production brewery in the heart of downtown Dayton in the site of the old Buckeye Brass & Iron Foundry circa 1938. They brew and distribute their beers to local restaurants, bars, grocery and retailers in the Dayton, Cincinnati and Columbus markets.

Zombie Dogz Now Open on Brown Street

November 13, 2016 By Lisa Grigsby

15032310_1441808535833851_7648682607517009699_nAfter much anticipation and several practice nights, the doors at Zombie Dogz  officially open at 1200 Brown Street today at 10am.

They’ll be serving up their gourmet hot dogs seven days a week.  Hours will be:

Monday-Thursday 10:30-11
Friday-Saturday 10:30-midnight
Sunday 10-9

With 12 dogz on the menu and 3 seasonal dogs making special appearances, they’ve even added a  gluten free bun option, diners will have plenty of choices.  Sides include Dr.Pepper baked beans, truffle macaron15016181_1194712637262713_3339948040059206830_oi and cheese and tater tots!

They’ve also partnered with Beavercreek bakery  Cake, Hope & Love to offer an exclusive line of cupcakes with three  flavors (pictured below) you won’t find anywhere else, according CH&L owner Shannon Teague. For many of us this ability to support to awesome local entrepreneurs in one building is great news!

Owners David and Lee VanArtsdalen, with 9 week old Dylan and big brother Dylan have spent the last week hosting friends, family and supporters into the restaurant so they can test the new staff, the set up, learn the registers and get ready for the crowds that will no doubt pack the place.  At one of the preview nights, I commented to them I think their biggest problem is going to be staying below the mandated  occupancy code of 66!  Lee shared that on top of having the new baby and opening the shop, they are moving to a new house this coming weekend as well.

The VanArstdalen’s posted this thank you on their facebook page today:davidlee

“Something I’d also like to mention is all of the local community we’ve pulled in to help build our location. The artists, marketing people, tech peeps, contractors, design group, realtor company ect……. are all a part of helping our restaurant come together and wouldn’t be what it is now without the help of everyone who’s rode this ride with us. We’d just like to give a special thanks to those mentioned that have really made our new location what it is now.”

We wish them all huge success!  And yes, they food truck will still continue to make appearances around town!

Calling all cooks!  Our Food Adventures Crew loves to entertain.  One of those ways is through whipping up meals for friends and family.  Want to learn some skills from the basic to advanced?  May we suggest some classes?  If you want to “wow” them at your next dinner party, well then, we have the place for you….

Whether you call it the Dorothy Lane Market School of Cooking or the Culinary Center at Dorothy Lane Market, there is a cult following for this organization.  And rightfully so, as we are lucky to have such a resource her in Dayton.  Many brilliant cooks, chefs and kitchen volunteers make kitchen program come to life.  Each year, throughout all 12 months, hundreds of attendees learn from some of the Miami Valley’s Best.  Today, Food Adventures would like to introduce you to some of the All Stars that shine in this stellar organization.

HERE’S THE SKINNY on THE CULINARY CENTER at DLM:

— Located at 6177 Far Hills Ave. in Centerville in the Washington Square Shopping Center.

— Hours are Monday – Friday 10am-3pm

— They offer classes year round for all ages

Mary Cooney, one of our favorites with Jax !

Mary Cooney, one of our favorites with Jax who has Mary’s cookbook !

— Prices range, depending on the class, and of course you get taste plates of each course during these events.

— Some classes are hands on, others are just observatory.  The smells and the flavors are always fantastic, and the lessons are very informative.

— Numerous volunteers help clean, serve and even prepare some parts of the meals.  Without them, the courses would not go as smoothly.  In fact they wouldn’t take place at all.

— They do private events, like office parties.  Team building events, anniversary parties, etc.

The school of cooking is close to our hearts.  Hungry Jax has

Chef House prepping for a Food Adventure Class

been steadily active in volunteering over the years. She introduced The Big Ragu to the group, and he has even volunteered about 10 times over the past few years.  Chef House has hosted her own cooking classes, and has lead the way for our Food Adventures Crew to reach our dream of hosting a couple of classes ourselves (The next one is  “Food Adventure Party Foods” on May 18th, 2016).

Over the years, we have gotten to know the “ins and outs” of this fantastic Culinary Center, and the many “unsung heroes” of local cooking.

We are proud to introduce you to just some of the workhorses, that make the center a great success.  They are today’s “Must Meets.”

CHEF JENN DISANTO:  This amazing Chef is even more of an amazing person.  She is one of our favorite people in the world.  Chef Jenn DiSanto has a long friendship with Chef House.  Hungry Jax has worked many of her cooking classes over the past decade.  Big Ragu even worked one a few year back, but his heart was stolen by the menu at her catering business called Fresco (that is another whole Food Adventure article in itself).  Jenn is a classically trained chef, known for using the highest-quality seasonal ingredients.

She earned her culinary degree in Connecticut but has traveled extensively, even becoming a private chef domestically and overseas.  Chef Disanto loves to pay homage to different cultures by producing some delicious, rustic recipes from different countries.  An upstate New York native, she brings a strong work ethic to the kitchen.  The result is meals that are extremely flavorful.  Jenn also devotes much time and resources to helping various Dayton area charities that are close to her heart.

CHEF ELIZABETH WILEY: Chef Wiley is one of the culinary superstars of the Miami Valley.  This Kansas native has been cooking professionally since 1979.  After coming to Dayton and having a nearly 2 decade stint at the Winds she went a different direction. In 2004, her big breakout came when she wowed crowds after opening Meadowlark Restaurant.  Her mantra is “We cook what we like to eat, and what’s in season.”  That philosophy has led to unmatched triumphs. Using her experiences cooking in Chicago, San Francisco and Key West, Chef Wiley has poured this knowledge into her delicious menus.  She parlayed her success and partnered in opening “Wheat Penny Pizza Oven.”  This inventive venture takes

pizza and Italian favorites to a new level.  She is also well known for her charitable contributions to local causes. Stay tuned for more news and business ventures from Chef Wiley.

CHEF LIZ VALENTI:  Chef Valenti is a positive force of energy at the DLM Culinary Center.  She is Catering and Private Party Director.  She handles all of this along with her businesses partnerships like, Wheat Penny Pizza Oven.  Known for pizza and innovative takes on Italian food, Liz’s star has been shining in Dayton for some time. Not only is she an amazing kitchen talent, she is also a great person.   If she is a part of the event, be prepared for a delicious time.  You will often notice her and her business partners helping various non-profit organizations around town.  She is always giving back to the community.

The Culinary Center also has some fun internal events from various Pot Luck dinners, to a Julia Child Birthday celebration meal.

Oh and lest we forget the store inside the Culinary Center.  Along the walls are books and various kitchen utensils for sale.  A lot of these items you won’t find anywhere else.  They also offer kitchen towels, copper items and many upscale verisons of essesntial kitchen tools.

Yellow Springs Brewery’s Cans Get a Redesign

November 9, 2016 By Kevin Gray

ysbrewerylogoOn Friday, November 11th, Yellow Springs Brewery will be holding a Metamorphosis Party to celebrate the official unveiling of their new can designed. The can design will be an extension of the new logo the brewery unveiled late last month.

Why the makeover? Co-owner Lisa Wolters explains that, “We were not unhappy with the old logo, but when we tried to apply it to our package, it didn’t lend itself to what we had in mind.” Namely, while the cans themselves looked great, the brewery name in the logo was hard to read, obviously a situation not conducive to retail sales.

The new logo retains the eagle from the original logo, but in the update, the eagle becomes the main focal point. “Eagles can mean a lot of things — freedom, strength, vision — but to Yellow Springs Brewery, the eagle suggests a certain spirit. A spirit that means you have the freedom, strength, and vision to reach higher, to not just accept the status quo, to embrace new perspectives and to dream,” explains Wolters. “It a was simplistic idea,” she elaborates, “the American entrepreneurial spirit. That’s who we are.”

416890_408501209165657_1083456839_nThe brewery’s new logo and can designs are a creation of Don Pendleton, a nationally recognized artist residing in Dayton. Pendleton has a connection with Yellow Spring Brewery’s salesperson Shawn Combs, who worked with Pendleton at Alien Workshop. Nate Cornett, the brewery’s other co-owner, and Wolters were fans of Pendleton’s work and were eager to have his help on redesigning the cans.

With its geometric shapes and muted colors, the new logo is reflective of Pendleton’s work. The burnt yellow and the purple were retained to tie into the existing Yellow Springs branding (which will be slowly phased out). The new cans will feature a single signature color per brand, so consumers will be able to differentiate beers like Zoetic from Captain Stardust. The logo itself will tie the brands together and retain consistency among labels.

The brewery’s taproom doubles as a gallery for local artists, and at The Metamorphosis Party, Pendleton’s art will be on display and for sale (for a sneak peak, check out his website. < http://www.elephont.com>). The party starts at 3 pm with a lineup of special Captain Stardust and Zoetic tappings (the Stardust variants include versions with coffee, biscotti, strawberry daiguiri, grapefruit, and one served on nitro. There will also be a habanero Zoetic variant). Stick around as they unveil additional limited releases throughout the night: Gindust (5 pm), Zoetic with mango (6 pm), Captain Stardust with sour cherry (7 pm) and Zoetic with grapefruit (8 pm).

ysbrewery

The party runs from 3-10 pm and will feature merchandise with the new logo, a photo booth, and food available to purchase from Harvest Food Truck. The brewery is located at 305 North Walnut Street, Suite B; Yellow Springs, OH 45387. For more information, contact Lisa Wolters at 937-767- 0222 or find them on the web at www.yellowspringsbrewery.com.

Vermouth: From Medicine to Mixology

November 9, 2016 By Brian Petro

Roman wormwood, vermouth's humble beginnings.

Roman wormwood, vermouth’s humble beginnings.

Combing through history, you will see one fact common to most liquors: they started off as medicine. Beer and wine had other uses. They were easier to make and used for everything from paying workers to surviving fasts to having something to drink that would not kill you. Before we started to dig into the science of diseases, doctors would prescribe methods that we would now call alternative medicine. Anything from draining humours through leeches to mixing a variety of herbs into a liquid and drinking it. One of the earliest herbs used was wormwood, based on the belief that it was effective in fighting stomach ailments.

The wormwood-infused wine would be consumed after a meal to calm the stomach and aid in digestion. This technique was used in Europe as early as 400 BC and in some cultures earlier than that. As the wine became popular in the 16th century, those creating it added other herbs and spices to take the horribly bitter edge off the wormwood. In Germany, this bitter root was called Wermut. When the French and Italians took hold of it, they just Romanticized the word, calling the new batch of fortified and aromatized wines “vermouth.”

Modern vermouth became popular around the end of the 18th century when Antonio Benedetto Carpano introduced it to the market. It quickly became a darling with the courts in the area and started to spread to the rest of the country. Not too far away, in southern France, dry vermouth was gaining steam. The French kept the botanical punch that the Italians had built into the wine, but dialed the sugar content back considerably. This is what gives dry vermouth its herbal punch. The Italians also have a version of a white, or blanco, vermouth that is a sweeter version of the French dry. It does not have less of an herbal kick; it has more sugar to hide it. Traditionally, these were the three styles of vermouth found in any liquor store. With the boom we see in craft cocktails, manufacturers are experimenting with other wines and herbs to offer new flavor profiles. There are rosé and orange wine-based vermouths now that utilize other botanicals.

Gaze upon this collection of Martini vermouths...

Gaze upon this collection of Martini vermouths…

For over 100 years, vermouth had a starring role in the cocktails the world enjoyed. Two of the classics, the Manhattan and the Martini, were based on the herbal flavors they brought to rye whiskey and gin, respectively. Flipping through classic recipe books, you can see that after the tremendous impact vermouth had when it arrived in the United States in the mid-19th century, it started to wane. The amount of vermouth became smaller and smaller until we settled on the 3:1 or 5:1 proportions you may see in bars. Venues that focus more on the classics will put the ratio closer to 2:1 spirit to vermouth, and may even offer the Martinez. The Martinez is one of the few vintage cocktails you will find where the vermouth, not the spirit, is the star in the glass. Two parts vermouth to one part gin (or 1:1, or 1.5:1, whichever proportion the bartender assures you is the original) is what you will find, with some maraschino liqueur to balance out the herbal quality.

Martinez

2 oz. sweet vermouth
1 oz. Old Tom gin (Ransom is an excellent choice)
1 tsp. maraschino liqueur
2 ds. Bitters (Boker’s is in the original, but Angostura works well)

Glass: Cocktail
Ice: None
Garnish: Lemon zest

Pour all of the ingredients into a mixing glass over ice. Stir until the cocktail is well chilled, then strain into the glass. Twist the zest over the cocktail then add it to the glass.

Martinez cocktail (credit: Ann Larie Valentine)

Martinez cocktail (credit: Ann Larie Valentine)

Any trace amounts of vermouth you were going to find in cocktails were wiped clean when Prohibition covered the land. Liquors that could not be faked were purged, lost in America for decades. When we finally returned to the business of drinking, vodka was becoming the spirit of choice. Vermouth has a strong flavor, and vodka has little. Vodka martinis, now sporting olives, forcefully pushed dry vermouth to the back of the bar shelf. And while some of the war vets were still big on the Manhattan, no one wanted to drink what their parents drank. Sweet vermouth soon found itself collecting dust as well, watching rum take over the brown liquor spot as vodka took over for clear liquor. The 1970’s and 80’s were dominated by sweet cocktails, balanced slightly by citrus juices. Unless grandpa was bellying up to the bar, vermouth was on the sidelines with the bitters.

The craft cocktail boom has invigorated the industry. From just a few bottles of Martini and Rossi on the shelf to an ever-widening array of flavors, vermouth is back. Before you run out and add that amazing collection to your liquor shelf, keep in mind that vermouth has to be at least 75% wine. That means an open bottle is only going to be good for up to four weeks on your liquor shelf. You can extend that through refrigeration, but not by much. Many brands offer smaller bottles to purchase. Grab one of those if it is just for you around the house. Or considering adding vermouth as part of your dinner plans to either get the stomach ready or calm it down after the meal. If the bottle lasts long enough to go a little south, you can add it to recipes that call for wine. Another requirement of vermouth is that it has wormwood as part of the recipe, best known as a dominant flavor in absinthe. That flavor heightens when you cook with it. You can put it in some cocktails to enjoy with your meal as well. Beyond the traditional Manhattan (sweet vermouth) and Gin Martini (dry vermouth), there is a wide array of cocktails that call for this fortified, aromatized wine.

Negroni

1 oz. gin
1 oz. Campari
1 oz. sweet Vermouth

Glass: Cocktail or Coupe
Ice: None
Garnish: Orange Zest

Pour all of the ingredients into a mixing glass. Stir, then strain into the cocktail glass. Twist the orange zest over the cocktail, then add to the glass. Alternatively, you can pour all of the ingredients over cubed ice (larger cubes work best), stir, then serve.

Negroni Cocktail

A Negroni on the rocks. (credit: Geoff Peters)

The Negroni is a vintage cocktail from Italy. The rumor is that Count Negroni, after an extended stay in America, was traveling the Italian countryside. When he came to his usual bar for his usual drink, an Americano, he asked to replace the soda water with gin. The concoction worked and had been the springboard for countless variations. Substitute the gin with rye whiskey, and you have a Boulevardier. Exchange the gin with champagne for a Negroni Sbagliato. The possibilities are endless.

Vieux Carré

.75 oz Rye Whiskey
.75 oz Cognac
.75 oz sweet Vermouth
1 tsp Bénédictine
2 dashes Peychaud’s Bitters
2 dashes Angostura bitters

Glass: Old Fashioned
Ice: Cubed
Garnish: Cherry OR Lemon Zest

Pour all of the ingredients into a mixing glass over ice. Stir, then strain into the Old Fashioned glass over fresh ice. Garnish with either the cherry or the lemon zest. Both, if you want to.

Built in New Orleans in the post-Prohibition era, it is a celebration of the vibrant cocktail culture that developed there. It is well balanced and a delight to drink. A bottle of Bénédictine herbal liqueur is a versatile addition to any home bar.

Scofflaw

2 oz. Bourbon or rye whiskey
1 oz. Dry vermouth
.25 oz. Fresh lemon juice
.5 oz. Grenadine
2 dashes Orange bitters

Glass: Cocktail
Ice: None
Garnish: Orange Zest

Pour all of the ingredients into a mixing tin over ice. Shake well for 20 – 30 seconds, then strain into the cocktail glass.  Twist the orange twist over the cocktail and add to the glass.

This Prohibition cocktail is appropriately named. Developed at Harry’s Bar in Paris in the 1920’s, it reaches for the traditional French dry vermouth instead of the sweet usually found in whiskey cocktails. There is also some debate as to the use of lemon or lime juice. The original recipe calls for lemon juice, and I will back that one. But experiment as you like.

With the resurgence of vermouth over the last few years, the options for bartenders have expanded. From Dolin to Noilly Pratt to Carpano, we have come a long way from just the bottles of Martini and Rossi on the shelf. Grab a bottle and take a sip before you start adding it to a cocktail. You may like what you taste!

Zombie Dogz Sets Opening Date

November 2, 2016 By Guest Contributor

zombie_dogzSo………, with much excitement, we’d finally like to announce that we are finally opening Sunday, NOVEMBER 13th 2016 @ 1200 Brown St. Suite 150. We will be open from 10am-9pm.

We are offering 12 core Dogz out of the long list of dogs that we have and will always have another 3 to seasonally rotate around throughout the seasonal changes. We are implementing side items other than chips, and also salads, and a new protein, chicken sausages, and also, finally by popular demand, a gluten free bun option????

Something I’d also like to mention is all of the local community we’ve pulled in to help build our location. The artists, marketing people, tech peeps, contractors, design group, realtor company ect……. are all a part of helping our restaurant come together and wouldn’t be what it is now without the help of everyone who’s rode this ride with us. We’d just like to give a special thanks to those mentioned that have really made our new location what it is now❤️

It has been a long journey and we are so proud to finally be at this point of

finally showing everyone what we’ve spent 3 years working so hard for, and what we’ve been working on the last 6 months. We’ve really put a lot of our blood, sweat, and tears into our brick and mortar location, and we are just so stoked to finally introduce Zombie Dogz Dayton to the community. We couldn’t have made it this far without everyone’s support over the years. That’s why we are just so full of emotions to finally give Zombie Dogz a permanent place here in Dayton, but most importantly to finally give our employees a permanent job. We are so lucky to have the crew that has stuck by us since the beginning and has believed in us this much to have stuck it out this long with us for this day to finally come. We’ve hired a new crew that we feel is just as rad and are so lucky to have wonderful people working for us.

With all of that being said…….. We super look forward to opening and seeing your lovely faces ?❤️
Now there’s no excuse that you couldn’t find us?

Again, thank you for helping us get to this point. It will never be forgotten❤️

Stolen Base Means Free Tacos For All

November 2, 2016 By Lisa Grigsby

tacoWhether your team Cubs or Go Tribe, everyone wins today with Taco Bell’s Doritos Locos Taco giveaway today! Taco Bell threw out the challenge:

If one of the Cleveland Indians or Chicago Cubs steals a base in Game 1 (Oct. 25)
or Game 2 (Oct. 26) of the series, you can snag a free Doritos Locos Taco on Nov. 2.

Cleveland Indians shortstop Francisco Lindor, stole a base in the first inning of Game 1 on Tuesday night, which enables all of us to get a free taco today between 2-6pm at your favorite Taco Bell.  The Doritos Locos Tacos are a hard taco shell akin to Doritos, filled with beef, cheese and lettuce.

According to Taco Bell, there is no purchase necessary, but management reserves the right to deny service if they believe you are double dipping. Free tacos are also subject to availability. This is the sixth time Taco Bell has given away free tacos in conjunction with the World Series.
