Food Truck Brings Tastes From Trinidad & Tobago to Dayton

There’s a new food truck in town! Shafton Greene was born in Trinidad and Tobago.  He says “the inspiration for my truck comes from wanting to to bring not just food, but our island culture to our to my city, Dayton.”
The SOCA food truck debuts at RiverScape serving up lunch today from 11:30am-1:30pm (weather permitting).

New Food Truck Debuts Tonight in Miamisburg

Authentic Laotian Cuisine is what this family owned & operated food truck will serve up. Little Boijon Asian Cuisine‘s first outing is tonight  in the Rosina Neighborhood of Miamisburg at the corner of Rosina Dr. & Alexandersville Rd. from 5-8pm. Saturday night they will be in the Crain’s Run neighborhood  at the corner of Crains Creek Rd. and Myna Ln in Miamisburg for lunch 11am-2pm and dinner 5-8pm.

They  will be taking carry-out orders via Instagram & by phone (937-204-9499). Walk-up orders are will be accepted as well! They accept both cash and credit card.

Their signature item: Little Boijon’s Egg Rolls. These are filled with pork and vegetables. Served with your choice of our house peanut sauce or sweet chili sauce.

 

Lo Mein. Your choices of meat are beef or chicken. Available in large or small serving sizes.

Food Truck Rallies Become Carryout Events

With local, state, and federal restrictions being updated on a near daily basis, Yellow Cab Food Truck Rallies were forced to adjust their business model. The rallies’ organizers have developed a solution that provides food lovers with the chance to eat from their favorite food trucks while simultaneously practicing good hygiene and social distancing. Rallies will be replaced by Carryout events with multiple trucks and no on-site seating. 

“Small businesses like food trucks generally don’t operate over the winter. By the time spring comes, they have used up most of their reserved resources and need to start making money again.” said Event Organizer Brian Johnson. “By adjusting our model to carryout it will provide an opportunity to support these small businesses.”

Food trucks scheduled to appear at Yellow Cab Tavern on March 20 from 5pm – 10pm include The Wicked Lobstah, Hunger Paynes, The Pizza Bandit, and more to be confirmed. In order to ensure customers’ safety, the following rules will be enforced during Yellow Cab Food Truck Carryout events:

  • Guests should call/text/email orders ahead of arrival if possible
  • Individuals will be encouraged to order for whole families or large groups to prevent such groups from amassing on-site
  • Eating on-site will not be permitted

“We’re doing our best to roll with the punches,” Johnson said. “We are committed to providing incredible food from the area’s best food trucks. It’s a matter of balancing service and safety, and we’ll always err on the side of safety.”

CO-OP Fest brings Friday night fun, food and music to support Gem City Market!

On Friday, October 25th, The Yellow Cab Tavern is excited to host CO-OP Dayton for their second annual CO-OP Fest, presented by IUE-CWA. With support from local labor unions and independent, cooperative, and employee-owned businesses, CO-OP Fest is a celebration of Dayton workers and cooperators. It is also a fundraiser for the Gem City Market incubator, Co-op Dayton. The event features some of Dayton’s finest food trucks, bands, poets, worker and cooperative initiatives, raffles, and games!

The musical acts include some seriously funky bands!

6:30pm – Deron Bell Band
8:00pm – Premium Blend Music
9:30pm – Freakquency

There will also be a tap takeover at the Yellow Cab’s bar with Fifth Street Brewpub, Dayton’s own Co-Op Brewery!

Founded in 2015, Co-op Dayton is committed to incubate cooperative businesses to bring sustainable jobs to Dayton and address Dayton’s food crisis through the Gem City Market co-op.

Rockin’ out to support Ronald McDonald House of Dayton!

This weekend, April 12-13, 2019, you can rock out to a 2-night music event and fundraiser for the Ronald McDonald House. Come for one or both nights of this special event at the new Brightside Music & Event Venue!

Friday night serves as the pre-party for Saturday night’s main event. There you’ll enjoy an extra special Happy Hour, which kicks off at 4:30pm, featuring a tasting from Cutwater Spirits and food available from Godfather’s Pizza. Music starts at 6pm with Last Call Trio, featuring special guest Danny Voris. At 8pm you can witness the 6 year old piano sensation Avett Ray (as seen on CBS News, Good Morning America, People, Inside Edition). At 8:30pm, the Kerry Smith Band rehearses for their big show on Saturday. Tickets are $10 advance, $15 at the door. VIP ticket $30 (includes Saturday night ticket too + reserved seating) More info here.

Saturday night is the main event! Doors open at 6pm. Harvest Mobile Cuisine will be here and have food available for purchase. Avett Ray is back with another performance at 7pm. Yellow Cab Food Truck Rally To Support Katie of Wicked ‘With

A longtime fixture of the Dayton food truck scene, Katie Marks of The Wicked ‘Wich of Dayton will be closing at the end of this season to deal with recently discovered serious health concerns. Rallying around her, The Yellow Cab and all of the trucks for the September 15 monthly Yellow Cab Food Truck Rally will be participating in a very special Sandwich Rally for Katie.

“Katie and The Wicked ’Wich have been hugely important for food trucks here in Dayton,” Brian Johnson, organizer of the Yellow Cab Food Truck Rallys said. “As soon as word got out about her health, we knew that we wanted to do something to help.”

At the September 15 Sandwich Rally for Katie, participating trucks will be donating $1 from every sandwich or specified item towards her medical bills. The Yellow Cab will also be donating a portion of the night’s bar sales to help.

“The doctors are optimistic about her situation, so we’re confident it’s only a matter of time before Katie is back in the community,” Johnson said. “Hopefully this Rally can help alleviate some of the stresses she has to deal with in the near future.”

Trucks participating in the Sandwich Rally for Katie will be Ramen Rickshaw, El Meson, Smokin’ Bee-Bee-Q, Thai1On, Greek Street Food Truck, The Drunken Waffle, Hunger Paynes Food Truck, Sweet P’s Handcrafted Ice Pops, Flying Santucci Bros., and Creme de la Creme Cakery. Local craft beer will be on draft, cocktails available at the bar, The Night Market will feature an array of local artisan vendors and live music is planned.

For those interested in attending the Yellow Cab Food Truck Rally, the event takes place on the third Friday of every month through October from 5-10pm. The Sandwich Rally for Katie will be at this month’s event on Friday, September 15.

Worth The Wait

A few weeks ago I met a couple girlfriends at the Yellow Cab Building for the Brunch Food Truck Rally.   Since brunch is my favorite meal of the week, I was geared up to go.  I was properly caffeinated, had cash in my pocket, and my pants had a little stretch to make way for all the yummy food ahead of me.  When I got there I was shocked by the amount of people who had the same plan in mind.  Everywhere I turned the lines were long.  I thought to myself that surely no food that came out of a truck could possibly be worth waiting for, but wait I did.

We landed on the always fresh and delightful Shakery Juice Bar since my friends and I were looking for something light and healthy to eat…but smells of waffle batter and maple syrup kept wafting in my direction.  Where was this heavenly scent coming from…? Of course the truck with the longest line of the day: The Drunken Waffle.

As I practically licked the last of my acai berry bowl, I made a mental note to wait for some waffles the next time.  Fortunately the next time came around much sooner than I had expected.  The Drunken Waffle was parked out back of the Cannery Loft Apartments the very next weekend, so my husband and I decided to give some waffles a whirl.

We ordered two meals and decided to split them.  I went relatively traditional with the “50 Shades of Swine,” a bacon wrapped breakfast sausage cooked into the waffle batter.  It was accompanied by a jalapeno maple syrup that wasn’t overly spicy, but left a nice lingering tickle on the tip of my tongue.  My husband took a left at classic and went with a dish that was full of twists and delicious turns:  The War Pig.  This dish had ham, bacon, Monterey Jack cheese, and a scrumptious herbed mayo sandwiched in between a spicy, 3 pepper waffle.  He also got a side of asparagus that were perfectly seasoned and cooked.  

All in all,  the meal was as whimsical as the names of the dishes, the flavor combinations were spot on, and the portions were not overwhelming.  Most importantly, the waffles tasted good, they were fluffy and flavorful.  I always appreciate when a restaurant (or in this case a food truck) can introduce some creativity into their food without losing focus of the basics.  The Drunken Waffle’s food is fun and exciting while still keeping the flavors at the forefront.

So the next time you find yourself in a long line at a food truck rally asking “How good can food from a truck really be?”  

Trust that it can be really, really good, and yes, it may even be worth the wait!

10 ?’s with Katie Marks of The Wicked ‘Wich

Katie Marks is the owner of The Wicked ‘Wich of Dayton, a food truck that specializes in fresh, made to order eclectic combinations to basic build-your-own sandwiches brought to the streets of Dayton. They offer food different from your normal routine; combinations of sweet and savory on delicious local bread, along with a variety of options for vegetarians.

Not only is she passionate about the food she delivers, she’s also passionate about Dayton.  The Wicked ‘Wich of Dayton is throwing their 3rd annual launch party, with all proceeds going to TJ’s Place of Hope and Building Bridges, two great non-profit organizations in the Dayton area serving at-risk youth. Come for an evening of great music, local craft beer, raffle prizes, and amazing food!

Admission is $10 for 8 talented acts, all of which are from Dayton aside from our guest act, Jounce. Raffle tickets are $1 a piece or 6 for $5, featuring some pretty cool prizes from local businesses in the area. The truck will be accessible without the door fee, so if you’re looking for a great sandwich, come grab one!  
So Katie says, “please come say hello and try the food. Not only are you getting a better quality and more convenient sandwich, you’ll be helping to make a better Dayton.”

Before the food truck reason gets rolling, we asked Katie to take time out to answer our 10 ?’s:

 

What is your favorite ingredient to cook with?

My favorite ingredient to cook with is garlic.  I think the best dishes begin with fresh minced garlic (not the jarred stuff).  It usually has a hiding spot within all of our creations, including my home ones.

 

What ingredient do you dread?

Onions.  I am so sensitive they are like mace.  Fortunately, I have a great crew on hand to make sure they are taken care of. 

 

What’s your favorite dish to make?

My favorite dish to make lately is French Toast.  My mom made it for me growing up, and I’ve always loved experimenting with different batters and toppings.  This weekend at the Brunch Rally, we are unveiling a new sandwich with French Toast as the bread.  Stay tuned, I just tried it and it’s super tasty.  (We are putting the menu on Facebook shortly)

 

What’s your favorite pig out food?

My favorite pig out food is The Root Beer Stande on Wilmington.  There’s nothing better than their Mac-and-cheese bites and a root beer float.

 

What restaurant, other than your own do you like to dine at in the Miami Valley?

This is such a difficult question, because there’s so many innovative and talented chefs in the area.  I wish I could give a top 5, although I’ll try and get away with food truck and brick-and-mortar.  PA’s Pork always has my heart with their take on different styles of cuisine, while Wheat Penny has me with their out-of-the-box style and fabulous wood fired pizza.

 

What’s your best advice for home chefs?

My best advice for home chefs would be to try something out of your comfort zone.  Don’t be afraid to mess something up, sometimes the best creations come from complete accidents or mistakes themselves.  Try out of the box combinations.  Cilantro and marmalade on a sandwich was because it was all that was in my refrigerator. 

If you could invite any 4 guests to a dinner party who would they be and why?

These questions are challenging!  My four guests would be:

1. The Wright Brothers.  I have always admired their innovation, intelligence, and dedication to a concept.  Their brilliance changed the way the entire world works, and it all started right here.  I would also want to ask about being alive through the transition from horse and buggies to fighter jets and electric start automobiles.

2. James Yancey.  Known in the music industry as J Dilla, he was a producer back the 1990’s that was celebrated for his sample methods with the very simple tools he used.  I would say he is proof that it isn’t the artist’s tools, but the artist themselves that can create beautiful masterpieces with what they have.

3. Jack Joyce, one of the founders of Rogue Brewery in Oregon.  I have always been fascinated with their business model and marketing.  The company is ran strictly word of mouth, and they have a great concept in their bottling and labeling.  Several of their ingredients even come from Rogue Farms, their own farm dedicated to the brewery.  I highly recommend the Pumpkin Patch Ale during the fall, and any of their Voodoo Donut ales they come out with every year.  

4. Paul Lawrence Dunbar. After reading his poetry, I would want to hear his story and also what his life was like in Dayton. I feel like he is a very underrated part of Dayton history, and often overlooked.

Who do you look up to in the industry and why?

I look up to Angela and Pete Olejnicek from PA’s Pork.  They have been amazing mentors and friends as we’ve navigated the food truck waters.  Angela is one of the smartest people I’ve ever met and is so talented at what she does, and Pete is also extremely talented along with handy.  It always seems like the two of them can get through anything, and have used their wisdom and experience to help me through some tough times.

 

What do you do in the Miami Valley on a day off?

I always love hiking Glen Helen, and treating myself and my partner to a local venue for the evening.  I am almost never disappointed with the local dining options, and the breweries here are incredible.  I’ll also venture out to local shows, for we have some extremely talented bands that play in the area.

 

Share a kitchen disaster, lucky break or other interesting story:

We have forgotten the bread.  Yes, the bread.  All’s I can say is thank god someone (really a member of a solid support system) could go and get it in time, and that we are all human 🙂

We are so excited for the changes and hard work we’ve put in over the winter. From the feedback we’ve received, we’ve come up with some faster logistics, opened up an expo window in the back, and have begun some new sandwiches that we cannot wait to share with you! We love you guys and cannot put into words how much we have appreciated the support over the last two years. Here’s to an amazing third season!

Slow-cooked teriyaki chicken is paired with Havarti cheese, with sunflower kerns for a smooth flavor and crunch with pineapple preserves for a sweet finish.

?LADY MARMALADE (Best of Dayton finalist from Dayton.com two years in a row!)
Sliced almonds provide a little crunch to turkey, fused with white cheddar while paired with cilantro and orange marmalade.

?PHILLY BOB THORNTON:
Roast beef is paired with Swiss cheese, then a layer of sautéed mushroom, onion, and green pepper, then finished with our housemade garlic-parm mayo.

?NEW AGE GRILL (vegetarian):
Sautéed mushrooms are sandwiched between two slices of Swiss cheese with giardiniera (pickled vegetables, popular with Chicago-style pizza), then topped off with our housemade Cabernet ketchup.

Default cheese is cheddar, although you’re welcome to ask about the different cheese we have that day. Add lettuce, tomato, onion, or pickle as well.

Food Truck Brunch This Sunday

brunchEveryone loves doing weekend brunch. Everyone loves going to a food truck rally. Now, Drunken Waffle presents Dayton’s first best-of-both-worlds with Brunch! A Food Truck Rally on Sunday, September 25 from 10am-2pm at the Yellow Cab.

“Serving sweet and savory waffle sandwiches, brunch is second nature for us,” Beth Sparks, Drunken Waffle owner said. “We’ve discovered that a bunch of other food trucks in Dayton do it really well too, so we thought, ‘Hey, let’s host a brunch food truck rally!’”

Serving up brunch options alongside Drunken Waffle will be local favorites Smokin Bee-Bee-Q, Greek Street Food Truck, Harvest, El Meson and Son of a Biscuit in addition to special guests Lily’s Bistro serving Beignets and Boston Stoker serving coffee.

“Bloody Marys and Mimosa are a very important part of brunch and we’ll have them available at the bar during the brunch food truck rally,” Sparks said. “Brunch is always more fun with AM cocktails.”

In addition to food and drink, live entertainment is also being planned.

GarlicFest Returns with Bocce Classic July 15-17th

The faint smell of garlic is in the air!  Today being National Garlic Day, it gives Dayton Most Metro the perfect opportunity to announce that GarlicFest is returning this summer to the Sons of Italy’s Bella Villa Hall.  We are again partnering with the John Pirelli Lodge for this popular event.  Food Adventures is honored to be helping with the festivities. The same weekend also features the annual bocce ball tournament called the “Bocce Classic,” which is in its 22nd year.

The Bella Villa Hall venue is located at 2625 County Line Rd. in Beavercreek, the same place the Italian Fall Festa is held.

The big weekend will feature:
A huge Food Truck Rally Friday, July 15th
The Bocce Classic Tournament, July 16 -17th
The Garlic Festival, Sunday July 17th.

One new attraction will see local celebs, and Up Dayton groups square off Friday Night, July 15th in a “Beginner Bocce Bash.” A Single elimination bocce tournament with cash prizes for the top 3 teams.  Just $40/team to enter.

The weekend will be filled with Food Vendors, Garlic Vendors, and Craft Vendors.  There will be a booth for the deep fried “Holy Cannoli.”  

There will be soft drinks, beer, and more.  There will be bocce ball, and the Garlic King and Queen.  Chef House and Hungry Jax from Food Adventures, will be hosting cooking demos with garlic inside the hall. Weezy’s Garlic, Spices and More will be there with all kinds of garlic goodies for you to buy!  Don’t forget the Garlic Eating Contest with host the Big Ragu and a Live Band !

With so much to do and so much to eat, you may have to make a couple of trips back during the weekend….

Greek Food Truck to Hit Dayton Streets

“The Greek Street Food Truck” is about to explode onto the streets of the Miami Valley

Food Adventures has super secret info that we have been waiting months to release right here on Dayton Most Metro.  It concerns Dayton’s newest food truck, that will soon make a splash in the Miami Valley.

THE GREEK STREET FOOD TRUCK is putting the final touches on its menu and final tweaks on operations, but looks ready to roll.

We are excited because this will be the first strictly “Greek Based truck” that we know of and brings further diversity to an already incredible selection of local food vehicles.

So whats the scoop on the new kid in town?  Who is behind the Greek Street Food Truck?

 

HERE’S THE SKINNY ON THE OWNER:

— CHEF CHRIS SPIRTOS, owner and operator of Greek Street Food Truck has an extensive cooking background.

Traditional Beef/Lamb Gyro from “Greek Street Food Truck”

— Chris went to Le Cordon Bleu College of Culinary Arts in Chicago to hone his craft.  The Centerville native, also  worked at L’Auberge and as a sous chef at Sung’s Korean Bistro in Cincinnati.

— Chris also studied under the Chef for Oprah Winfrey, Chef Art Smith, while living in Chicago.  He was so well thought of, that Chris was flown to Oprah’s California home to help fix a dinner she hosted for the first graduating class of her school in Africa.

— More recently, Chris has worked on the incredible food truck, Zombie Dogz

— Born into a Greek family (his grandparents were from Greece), Chris’ recipe for Baklava is his mom’s, and it is a traditional favorite.

HERE’S THE SKINNY ON WHAT TO EXPECT:

— The meats are individually layered on a spindle and cooked.  There are no compressed or processed meats.  Just a Beef/Lamb mixture spindle, and a Chicken spindle.  Each gyro is sliced to order.

— The Greek Street Food Truck will have a core menu of:
   Gyros
   Greek Fries  or Regular Fries
   Spanakopita (a Greek spinach Pie)
   An assortment of dips, possibly including hummus
   Homemade Baklava

— The menu will feature daily, revolving specials as well

 

Now, without further delay, let’s give you our menu items from Greek Street Food Truck that are absolutely, “Must Eats”….

 

MUST EATS:

— CHICKEN GYRO, STREET STYLE: Stacked rotisserie chicken breasts slices, piled into a pita and topped with “street style toppings.”  Street style means:  tomato jam, pickled red onions, crumbled feta, fresh herbs, fries, and tzatziki sauce.  Quite honestly, one of the most flavorful and unique gyros we have had.  If you try one thing, this is item to grab.

— BEEF GYRO, TRADITIONAL STYLE:  Shaved slices of stacked lamb and beef rotisserie cooked meat.  This is a throwback to the gyros of the old country with “traditional toppings.”  Traditional toppings are: tomato, tzatziki sauce, onions, smoked paprika and french fries.  This gyro is authentic.  It is like a steak sandwich, no processed meat here.  Damn good food on the “go.”

Food Trucks Rally For Charity

10351524_797210350338237_7343648853761494128_n-3The Dayton Food Truck Association is holding their first Charity Rally tonight  from 4-8pm at Courthouse Square.  Black Label Entertainment will be providing music for the evening.  While not all the association trucks will be on hand, the following trucks  are scheduled to be serving up street food:

East Coast Eatz, El Meson, Flour Power Pizza, Go Cupcake Horseless Buggy Eatery. Hunger Paynes, Kowalski Hots, Lilia’s Outdoor Cafe, McNasty’s, Mohawk Freestyle Grill,  PA’s Pork, The Shakery Juice Bar

According to Vanessa Back of the Dayton Food Truck Association, “each truck will have a tip jar and those proceeds along with a set % of sales from each truck (which she did not want to disclose) will be donated to be split amongst the four  charities.” Guests are encouraged to bring donations for the chosen charities.

Top Dog: Zombie Dogz Food Truck Still Leading the Pack

“New Dog #2” Zombie Dogz Latest Pup!

Who waits in a line 70 yards long for a hot dog?   The answer is a lot of people in the Dayton area, as long as they are waiting for a Zombie Dog. In fact, with over 16,000 “Likes” on Facebook, this food truck is nothing short of a phenomenon!  Since Food Adventures with Big Ragu and the Crew are frequent visitors to this traveling delight, we decided to spread the word amongst our foodie readers!  Hungry Jax even marked this territory as one of her “Top Five Eats in Dayton” so no one has had more Zombie Dogz than us …

With Halloween approaching and The Walking Dead Zombie show starting back up, it is the perfect time for a Zombie Dogz Food Adventure  article!

HERE’S THE SKINNY:

— Zombie Dogz is a food truck that takes hot dogs to a gourmet level with their unique toppings and handcrafted side dishes.

— Mom and pop establishment founded in 2012 by David and Lee Ann Van Artsdalen. They recently welcomed the newest member of their family this spring, baby Barrett Axel!

 

 

— Budget friendly at only $6/dog, you’ll be able to feed your own pack a hot dog that’s been grilled, tucked into a grilled bun and topped with combinations that will make you howl in delight!

— Not a carnivore? No worries! They offer tofu dog’s as a substitute.

— In the “ZD” logo, you’ll see the silhouette of David and Lee Ann’s dog, “Gauge”!  He even has a Zombie Dog named after him, the “Killer Gauge”.

 

Zombie Dogz offers up hot dogs that will surely make you salivate! You can find a full menu on their website, however they rotate it weekly to offer a wide variety.  To see what Specialty Dogz are offered this week, and to stay on top of their latest creations, tune into their Facebook page HERE.   They have so many delicious dogz, that it’s hard to nail it down to a few faves….. but we did.  Here are our top dogz aka Must Eats !!

 

MUST EATS:

— CALLING IN DEAD: There’s nothing dead about this dog. An all beef hot dog topped with a creamy homemade white truffle mac & cheese  and finished off with crumbled crackers.  It’s your childhood in a bun…. but better.

— THE DEAD DIXIE: This pup is covered in diced green apples, applewood smoked bacon, blue cheese crumbles and their signature bbq sauce! A great way to eat all of your food groups in just one bun!

— THE GERMANATOR (DAYTON OKTOBERFEST SPECIAL):  Topped with a braised beef brisket, crispy fried onions and a homemade beer cheese. This dog would surely satisfy the appetite of a former Governor of California!

“Calling in Dead”: Your childhood in a bun.

— NEW DOG #2:  It’s not uncommon for one of their new masterpieces to debut nameless. Zombie Dogz enlists their Facebook followers to take part of the naming process! This dog debuted at Oktoberfest as well. Topped with apple cider braised carnitas, spiced apples, arugula, butternut squash puree, and a sage crumble.  It is simply Autumn deliciousness, with toppings Chef House can appreciate.

— THE NIBBLER:- An American classic turned Zombie! This is their take on a coney is topped in homemade chili, diced red onions, mustard, and muenster cheese.  The King likes to tear into these like a dead walker into fresh meat!

— KILLER GAUGE – Named after their beloved dog, this hot dog is topped with a buffalo chicken dip, celery bits, blue cheese and ranch.

 Honorable Mention: THE GRANDE ZOMBE: Pronounced “Grand-ay, zom-bay,” this spicy little number includes queso sauce, shredded lettuce, cilantro sour cream, and crushed corn chips.  We like to heat up the night with this graveyard favorite.  Also, check out Big Ragu’s favorite, the dessert Zombie Dog called the “RED ROCKET” which is a banana in a bun  covered with peanut butter powder, stawberry jelly, white chocolate chips and pop rocks ! 

 **** IMPORTANT: Not every one of these Zombie Dogz are offered all the time.  They typically offer a few choices and rotate those throughout the year.  David and Lee Ann are always coming up with new flavors, so stay tuned.

 

“Dead Dixie”: Bacon, Apple and Blue Cheese Bliss.

From festivals, to food truck rallies, horror conventions, Oktoberfest or special single appearances, Zombie Dogz delivers the goods.  Our advice when they are around .. GET THERE EARLY, because this food truck is anything but dead.  They are easily the most popular food truck in Dayton.  Is it the Zombie Name?  Is it the one of a kind, unique toppings?  Is it the reasonable prices? The great customer service? For us, it’s all of the above!

10?’s with the Chef of Mohawk Freestyle Grill Food Truck

At a young age, art was always a great outlet for his creativity, but the prospect of work behind a desk as a graphic designer day in and day out was an option that didn’t interest him. Food always seemed like a hands on artistic outlet that included few desks and endless possibilities for medians to work with. With his culinary degree from Pennsylvania Culinary, he started honing is skills in local restaurants and big corporate kitchens. Learning management, fine dinning, and banquets from names like Aramark, Marriott, Bob Evans,  as well as working a few other local upstarts and private events. After a few years in the business working under corporate rule, he stepped out to create his own way. It’s been his motto to do it his own way. He worked in  sales and marketing, kitchen design, and even became a national expert in sports memorabilia.  All the while meeting chefs  and trying all kinds of regional foods at the places only the locals would eat at. He wasn’t completely out of the industry, still  doing small private events and catering weddings to keep his skills sharp. In 2010 he and his wife Allison, started the preliminaries for 185880_140286429446031_961840840_ngetting back full time in the kitchen. In June 2012 for his birthday,  Aaron bought his kitchen- a 1974 ex-Phillidephia Fire Department Equipment Truck. It is his restaurant, his way. Called Mohawk Freestyle Grill named after the mohawk on Chef Aaron’s head and the way he runs a kitchen. He describes it as “an ever evolving style of food using local seasonal ingredient in an out of the box way.”

 

What is your favorite ingredient to cook with?
I like fresh local seasonal ingredients like when I was in Georgia for a year the Georgia coastal shrimp were the sweetest freshest shrimp, or Stone crabs in Florida, lobster, scallops, and clams in New England.  Here I like the local Beef and bison and elk,  it’s bigger and more flavorful when it hasn’t been frozen and shipped across the country. So I guess meat is a main ingredient of mine. Definitely bacon has to be a favorite also, but that’s seems like a cop out. you can’t go wrong with.

 

What ingredient do you dread?
Lima beans there just isn’t any reason for anyone to ever eat them, I’m not sure bacon can even make them better.

 

What’s your favorite dish to make?
I know as a chef I should say some crazy french something or some great souffle or so1001491_411337945674210_1059881076_nmething but at the moment I like making our Mohawk burger.   It’s a ground ribeye steak blend that is messy and just a great classic burger made the right way. I love it when someone trying a dish I make goes -wow that was great. That is what makes it a Favorite to me it seems to always bring a smile to peoples faces.

 

What’s your favorite pig out food? 
Anyone that has ever eaten with me will laugh at this question because anytime we go to a new restaurant or truck I tend to order way more than I need but I love to try new food and different interpretations of the dishes they make. So I’m always sitting at the table at a new place with like five plates, passing this one to this friend and saying “hey can I try that.” That is how I roll. Food wise though I tend to pig out on greasy foods like pizza and burgers, bar foods wings and the normal stuff.

 

What restaurant, other than your own do you like to dine at in the Miami Valley?
I like local authentic and original idea places, like Thai9, Coldwater Cafe, and definitely all the local food trucks.
 
What’s your best advice for home chefs?
Keep it simple.  Sometimes salt and pepper is all you need, but you definitely always need them.
 

 

If you could invite any 4 guests to a dinner party who would they be and why?Ty-Cobb
I thought about this pretty hard probably for my answers, too hard,  but there are plenty that could take anyone of these four seats but here they are. Ty Cobb- he was hated and loved at the same time for being the best and most focused in his field and at the same time was never happy.   He seems like now he may have some life lessons and I am forever a Detroit tigers fan. Teddy Roosevelt -he once rode a moose in a river – need I say more. Ernie Harewell- he seemed to be a great guy always had a funny story to tell and again I love baseball and the Tigers. Fourth seat is always reserved for my wife, you never can eat enough meals with your spouse and she has the best pallet I know, so afterward we could talk about the food and so she’d believe me when I said who was there.

 

Who do you look up to in the industry and why?
I have to look up to all the guys in trucks already,  vastly more popular and successful than me. There are some great trucks already in the Miami Valley. A guy I’ve looked up to for years in the food industry is Scott Schmucker. An instructor and Chef extraordinaire at Art Institute Pittsburgh, who I had the  privilege of having as an teacher at PA Culinary.

 

What do you do in the Miami Valley on a day off? 
Swim in my pool. Look for other food trucks. My favorite days are when I go out and eat at three or four restaurants for lunch like an appetizer here, a side here, entree here, some desert here, some food shopping at Dorothy Lane Market and or a farmers market I come across, and then home to create something new.

As a food truck owner you’re always battling a vehicle as well as the  normal kitchen issues. I’ve blown engines and had to tow my truck into an auction on a tow cord but this week after just getting a new engine,  it broke down again.  I towed the truck to the event and on the way home I realized that when they fixed the truck last they added a new fuse for the fuel pump and I had over looked that,  looking for fixes for why it wasn’t running. I towed it 30 miles to Kettering and back before I realized my problem was a $1.10 fuse.  It’s always something silly like that for me.

The Big Ragu, Chef House and Hungry Jax are no different than other Daytonians.  We have full time careers, love our family, and we chase Food Trucks around town.   As you know, mobile food cuisine is currently ‘all the rage’ in the Miami Valley.

One of our favorites,  Harvest Mobile Cuisine is a Dayton food truck owned by Patrick Sartin, a graduate of the Culinary Institute of America.  After working in various kitchens across the country, Patrick bought a food truck with the goal to offer comfort foods that use local produce at an affordable price.

Harvest Mobile Cuisine is one of the most popular food trucks in Dayton and has a legion of loyal customers.   Follow them on Facebook and check out their website harvestmobilecuisine.com to find out where they are gonna be rolling off to next.  Its a local Food Adventure on the “go” ..

Must Eats:

Nothing better than a Local Wrap in one of the best dining rooms in Dayton… Five Rivers Metro Park

  • Harvest Fries– These are not your average fries!  They are a mixture of white potatoes & sweet potatoes, seasoned with fresh herbs and served with Sriracha ketchup.
  • Humble Farmer– A salad made with Patchwork Greens, a variety of seasonal vegetables, creamy goat cheese and tossed in Harvest Vinaigrette.  One of the reasons we love this salad, is that it’s constantly changing!  Order it one time and your salad might be made with fresh picked strawberries and asparagus…..the next time it might contain sugar snap peas.  You can count on the fact that it will always be fresh!
  • Local Wrap– Our favorite rendition of this wrap so far consisted of Hill Family Farms Chicken, Jackson’s local Strawberries, Asparagus, & Goat Cheese on a Whole Wheat Tortilla Wrap.  This tasty offering is also served with your choice of fruit or Patchwork Greens.  We highly suggest the Patchwork Greens!
  • Harvest Burger– We love Harvest Mobile’s take on America’s favorite sandwich!  It consists of a Turkey Burger, Roasted Garlic aioli, White Cheddar and Patchwork Greens on a warm bun.
